There's a pork roast in my oven right now, smells lovely. It doesn't seem to be producing much in the way of drippings though, I am not overly optimistic about the gravy prospects.

I was right about the gravy, nothing to work with. The roast at least tastes good, but gravy would have been awesome.

When I roast any meat (especially a lean cut), I make sure there are a few inches of water in the roaster, then baste the meat so at least there is some flavour to the liquid left.
Tonight for supper was M&M Meats Oriental Party Pak, and I made Chinese noodles flavoured with soy, garlic, broth and green onions.

Saturday night we made fish ( not battered. Just spices and fresh lemon slices in the oven ) with home made fries. Last night homemade Mac and cheese with leftover garlic bread from Friday nights dinner. Not sure tonight yet

DH has a somewhat unhealthy obsession that borders on fanatical with stove top stuffing so per his request I made a hot chicken sammy with stove top and gravy. I like it but prefer my own homemade. Oh well DH was happy.
I'm at the salon right now so I'm not sure exactly what I'll make tonight. It seems too far away to think about it

Chicken pieces baked with lots of onions and carrots - thickened juices from that will go over baked rice. I'm having a salad with it - it's enough of a veg for my husband to eat some carrots!

I finally used a coupon I've been carrying around for almost four years! Dole Endless Summer Salad kits were on sale for $3.98 and some were 50% off with earlier expiry (I needed it for tonight so...) minus my $1 ned coupon I got from a SC trade = .99¢ I also picked up some stir fry beef to add in and make it a meal.

Meat Loaf with baked potatoes and carrots and rice pudding for dessert. Easy meal all thrown in the oven and it will smell good soon too!
