stuffed a pork tenderloin....sauteed onion, mushroom, apple, spinach and added bread crumbs, spices etc....butterflied the tenderloin, pounded it flat, added a thin layer of philly garlic & herb cream cheese, added the stuffing, rolled and tied with kitchen twine, and seared in a frying pan...THEN in a small roaster, added sliced potato & onion, spices, the leftover stuffing, topped with the tenderloin and then poured a mixture of cream of mushroom soup and milk over everything...baked for about an hour at 375, it was delicious!

@KelJo that does sound yummy!
Supper tonight is meatballs in garlicky mushroom sauce, over pasta, topped with sauteed mushrooms. Coleslaw to go with.

..this evening I'm making Cheddar, Cauliflower & Potato Soup (Dairy Goodness) it may not sound appetizing but it sure is comforting & delicious and italian sausage on a bun...
we have a major storm headed our way..snow starting tonight and winds picking up tomorrow morning into Thursday evening...hurricane force wind later Wednesday and continuing until Thursday 100km/hr+ with 155km/hr gusts, so I'm expecting to lose the power. I was going to make extra food tomorrow just in case but think I may do it tonight. I have ground beef thawing to make a meat loaf and a cheap beef roast to go int the slow cooker for sandwiches, etc. Luckily, I have a wood stove that can cook or reheat food as needed if necessary

We’ve got pickleball tonight so an early dinner for us. Going to make a platter of nachos with spicy ground beef, cheese, jalapeño, etc.

Gee, it was yummy! Good collaboration between us.
Don't know what's on for tonight, since my husband took the leftovers to our son when he went to get his snow tires put on - pretty cheap payment, lol!
However, I was reminded of this vid of a former kitten of ours from years ago, his first time with real meat - turn up the volume! (It's my hand, laughter is my son's).
I just replayed it, and Vader kitty was looking all over to see where the kitty was!
