    Last day of Christmas! Here in NL, Old Christmas Day is celebrated the same as Christmas Day (minus the gifts) today I'm baking a ham, with an orange glaze and making scalloped potatoes, macaroni salad, gingered sweet potato and dinner rolls

    what a lot of work I have made for myself for dinner tonight!
    But most of the work is in the prep, which thank goodness is finished now.

    The menu will be bite sized pieces of various veggies that are dipped in an egg white mixture with herbs/powders and sauteed up crisp and lightly browned on the outside ( you would swear you are eating a Tempura batter! )

    Also making up an assortment of frozen, store bought Appy's because I want to show the gang how easy the new air fryer cooks these things up crispy and brown.

    I shook the homemade wedges up ( I used russets ) with spices and a small coating of oil in a bowl and placed just 4 of them in the fryer to see how fast they would take to cook...That WAS fast! I set it on the highest temp for 13 min.
    I'll do the rest of them up closer to dinner.

    This will be fun!!

    Tonight we are having Chicken Fajitas I will probably make mine into bundles, I love the crispy tortilla. We are going to use mushrooms & peppers and will also add slices of portobellos to bulk the mixture up so we have leftovers to make Chicken Fajita Salads for tomorrow's lunches.

    Looks like leftover beef dip for me. I stopped on the way home for more buns and I am looking forward to it

    Last night I made potato soup and served homemade potato buns to go with it.

    Tonight, I am not sure yet I have some cauliflower to use up but that is as far as I have gotten so far.

    Last night I made quesadillas with some of our leftover Xmas turkey I had frozen. On each wrap I put turkey, black beans, grated cheese and salsa and browned in the fry pan-they were pretty good. Too bad I did not have peppers and guac.

    I showed the kids how to use it, they'll be experimenting too I suspect.
    hmmmmmm.....my boys love perogies but I hate cooking them...Good idea!

    ...pan seared strip loin steak & baked potato, not sure what else..maybe mushrooms (if they're still good) and steamed baby carrots
