    Comfort food tonight
    Roast Beef, Potatoes, Carrots and Onions and a nice rich gravy. Lemon Pie made yesterday and if I don't run out of energy a batch of Raisin Scones after supper. It is Minus 40 here today and Minus 50 with the Wind-chill. Brrrrr......

    Tried to take a sick day today but too many things needed my attention, but with that being said I did work from home so I have put a pot of Beef Stew on the stove to Simmer. Will add carrots and potatoes to it later. Mom will have hers with homemade Potato Buns (already made) and I will have crackers.

    Another bonus is Mom might have to work late which makes Stew perfect so she can reheat it when she gets home if need be.

    Today was homemade vegan chili from my Crock-Pot. Also black bean tortilla chips with dayia vegan cheese. Very tasty and melty cheese. Also a veggie wrap on the side.

    I cooked up Fresh pasta this morning with a Spinach/Onion /Garlic Cream sauce and put shredded cheese on top. Salad and garlic toast ready to go. Went to Blue Friday and the chips called my name. Pasta just may be for Sat. night now. Darn you Blue Friday and your great deals. Lol. The package mix of Franks Hot sauce is soooo yummy and even taste better being free. Darn Scottish Blood. Lol. Have an amazing night everyone

    Right now the plan is to use Leftover Chicken Fingers and turn them into Chicken Parm with a side of Pasta. Will probably make Garlic Bread and a Salad to go with it. This is the plan as long as Mom does not have to work late, if she is working late I will need to come up with a plan B as you cannot really reheat Chicken Parm.
