Decided on Homemade Pizza with a Salad of some sort, thinking I might make a Balsamic Cucumber Salad, not really feeling lettuce today.

I am making a Brown Sugar Sesame Pork Loin in the slow cooker, on the side I will serve Rice with Sauteed Zucchini, Mushrooms & Peppers.

Last night i made beer liver with fried onions and bacon and homemade fried in the air fryer. Also mixed a green salad with an oil and vinegar dressing.

Thinking tonight I will make something with Pasta. I am in the office for the morning but going home at lunch as I have meetings so I was originally thinking something in the slow cooker. Only issue is every recipe I have pulled right now for the Slow Cooker would be served with Rice and we just had Rice last night.
So now I am thinking Pasta, I have a Instant Pot Chicken Bruschetta recipe I want to try or I have every on hand for Spinach and Ricotta Pasta bake, would just need to pull Spinach from the freezer.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Change in plans, still having Pasta but decided on Mac & Cheese with a Salad on the side. Salad will be Cucumbers, Bocconcini & Balsamic Dressing.

The 2 casserole dishes I filled with these beauties will cook up nicely ( I hope ).
Thanks to Rachael Ray and her easy version of making cannelloni. Why struggle stuffing the tubes when you can fill a flat pasta square and roll it up?

Change in plans, I went to Costco and they had Chicken Breast on sale and I could not pass up the sale so 2 packages "fell" into my cart.
So we are now having Baked Chicken Breast with Asparagus and Leftover Rice with Zucchini, Peppers and Mushrooms.

The weather is not too warm here yet (10-12 in the morning, 20-22 deg in the afternoon) so yesterday I made a NFLD jiggs dinner (it requires the oven and pot boiling for most of the afternoon) I haven't made one in awhile so figured it would be a good time before the weather gets too warm...Beef roast, salt meat, potatoes, carrot, turnip, peas pudding, molasses pudding, gravy, etc....blueberry cheesecake for dessert.....there's tons of leftovers for today!
