Experimental food! Had a very tasty burrito on the weekend at the "Gecko Bus," a refitted bus that serves Mexican food and was inspired!
My first idea was the burrito, thought for sure I could do that at home. But another friend was talking about a baked egg roll recipe and I decided to put the two together. Cooked chicken thighs (bones in, no skin) in the crockpot with homemade taco seasoning for several hours, shredded that. Next day, used equal amounts of shredded chicken, cooked basmati rice and cooked black beans from my freezer, added a bit of shredded cheese and a few spoonfuls of salsa.
Bought egg roll wrappers at the grocery store, followed instructions to fill them with the above ingredients. Spritzed with olive oil and baked, ing partway through. Came out nice and crunchy, a big hit! Served with the sour cream I made the other day (whipping cream with cultured buttermilk added to make a homemade sour cream), mixed with chipotle powder and fresh pepper.
I know this sounds all gourmet and all, but really I'm an experimental cook, like to try new things! I'm trying to get us eating more real foods that I make myself. Sour cream was my latest experiment; on its own it was just meh, but seasoned cream with the egg rolls worked out great.Last edited by Zonny; Tue, May 12th, 2015 at 07:43 PM.

Made Beef Enchiladas for the first time tonight with homemade enchiladas sauce! Were really good and quite easy to make! :D

Late supper today - and for sure, not what I had planned to cook, since I'm not cooking.
Husband had a sandwich when he came home from work, I was sleeping.
Then we both slept.
So now it's after 9 p.m. and he's off to get KFC for him and Taco Tuesday for me - luckily they are close together, and he offered to get both. Aw, what a honey!

Just gpt home from dinner at my dads. Its his birthday so he cooks us dinner! Wouldnt let anyone help. He bbqed a delicious and juicy steak, baked potatoes and corn. It was a great evening with lots of great conversation.

Last night I did not get home until after 5 and Mom had nothing planned and everything was frozen. After much debate finally around 7 we had nachos.
Tonight Mom is at work and I am so far behind at work that tonight will be left over pizza, quick easy no work on my part other than tossed it on a cookie sheet and in the oven and dinner on the table in under 30 minutes.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,
