Yes, roasted. I was surprized when looking at all the recipes that the cooking time was so short, because I'm used to cooking beef roasts longer and lower temps to be tender.
To about 1/4 cup butter, I mixed in about eight cloves finely minced garlic, seasoning salt, thyme, chili powder - and slathered it all over the roast, most of it on top.
So it was in the oven at 425 degrees for 45 minutes, then rested for 15 tented with foil.
The middle was really rare - as it's supposed to be apparently - and it was fabulously delicious, especially with the sauce I made. Even the ends which were light pink to brown, were still very soft and flavourful.
The sauce I made was extra-hot horseradish, mayo, garlic powder, paprika, salt, pepper, sugar, and mustard. I didn't make it too hot, since I can't handle it too spicy, but just zingy enough. I had extra plain horseradish for my husband to add.

Tonight I finally made sweet and sour pork with pineapple, rice, coleslaw and a big glass of milk.

hubby works evening shift so i was on my own for dinner, had dinner at my mom and she made pho :D my parents even packed a to go package for me. Love my parents.

I thinly sliced the leftover beef tenderloin, heated it up slowly with the beef drippings in the oven - oh, so juicy... wish there was more left - I had to leave most of it for my husband.
Served with fettuccini in mushroom and garlic sauce, salad with lettuce, cucs, carrots and chopped hard-boiled eggs (that's a great way to get my husband to eat salad!).

cheesy fries topped with bacon and green onion. We made our own fries from the 20lbs of potato we got. We each made our own dipping sauce. I add siracha to mine :D
it's not a small plate. A medium sized turkey can fit on this plate

We had yummy, local Spolumbos chicken apple sausage served on crusty buns cut from a baguette. Carrot sticks and a treat of coffee crisp bars for dessert( on sale at my SDM).
