I'll be having another bowl of a freshly made batch of pumpkin soup. Had one at lunch, it was so creamy and delicious. Small squares of very thin crust pizza to accompany my soup. All within the allowable calories. A couple of shrimp with sauce too!
2023 had better show some promise or else!

Im trying a new pulled pork roast. It’s cooking low and slow in the oven. We’ll have it with coleslaw, possibly fresh veggies with home made dip. Probably have it with French bread because it costs a lot less than fresh buns.

In case anyone is looking for inspiration. It is winter break in SK, so I’m home with our kids for the next week. Here is my general meal plan for the next several days.
Egg and cheese wraps with sliced apple sprinkled with cinnamon.
Burgers with home made sweet potato fries, fries & onion rings, fresh veggies with dill dip.
Roast chicken, lemon potatoes, steamed California mixed veggies.
Chicken salad sandwiches with tossed salad.
Dry fried pork chunks, noodles, mixed veggies.
Deluxe salad - lettuce, cucumber, salad, pecans, cranberries, marble cheese.
Home made treats
Chocolate pie
Confetti squares
Apple crisp
Cream cheese sugar cookies
Oatmeal chocolate chip cookies

Tonight's dinner will be a seafood bonanza! ( well, as much fanfare as I could fit into my 315 calories....lol )
3 x medium mushroom caps " stuffed " ( giggle ) with salmon and ricottta, then broiled.
2 x large shrimp with 1 Tblsp sauce.
50 grams Bay scallops, sauteed in garlic + green onions, dusted with red pepper flakes.
114 grams cod fillet baked in foil with dill, green onion + lemon slices
1/2 c. green beans.
DH made a killer chicken/rice soup late last night, ( for him and DS ) so figuring that will be one of the items on their dinner menu.

I had originally planned a nice Steak dinner for this week but I was not feeling Beef today so now we are having:

Tonight Lasagna. Cooked the beef this morning and will make the lasagna later this afternoon and pop it in the oven.
Tomorrow- Shrimp/steak, ceaser salad, fresh asparagus, mushrooms/onions and fries in the air fryer for those that want them. (mission freezer clean out)

Last night we had leftovers from the night before which was a quick and easy rice with sautéed zucchini (it was dangerously close to going to compost
) leftover onion , garlic and canned tomatoes with lots of oregano and chilli flakes with cubed marinated tofu and I roasted up an acorn squash with garlic oil. Pretty good.

Tonight we are going to try 20-Minute Chinese Ramen Stir-Fry, I do not have any Ramen but I have some Chinese Noodles I can use instead.

Bit of a change in our meal plans because I picked up discounted meat from Sobeys today.
I turned 2 trays of extra lean ground beef into 100 large meatballs. I’ll put those in the freezer for future meals.

If this pain goes away ( post procedure root canal pain ) I will enjoy my pumpkin soup ( again ) with some thin fake crust bite sized pizza squares.
