Yesterday we had Chinese takeout.
My mum just had a surgery and isn't feeling the best, so we are going to make the 4 hour trip this weekend to see her. I was up until the wee hours making food to freeze for my mum so she can just heat it up and not have to worry about preparing anything! I made grilled chicken thighs with a delicious creamy white wine reduction sauce, and my boyfriend made a chicken casserole all by himself! So proud. Today I am going to try to do some baking and possibly make one more dinner dish. Still not too sure of exactly what I will make, but it will come to me.

my dinner last night, spring rolls and vegie soup homemade of course!
this is deep-fried apple pie! also homemade haha it was delicious

Dawn can u share ur spring roll recipe...I used to make them when I was in highschool but have forgotten lol
last night was chicken souvlaki (marinated with the souvlaki marinade from PC) and veggie rice

Tonight is taco night in canada, well at least at my house.
It covers all 5 food groups and is yummy......so hungry.

Well my veggie spring rolls I just use
shredded cabbage
carrots juliene style or matchstick would work too (I just sliced baby carrots lengthwise)
mushroom
garlic
soya sauce (only a little)
I cook all that up in a frying pan.... don't have exact measurement because it depends on how much you are making and individual tastes. When it's finished wrap it up in a spring roll wrap and deep-fry till golden (I don't deep fry it either I just put it in a frying pan with a tad bit of oil and heat it up until its crispy)
The apple ones are just basically apple pie filling inside a spring roll, you could use any recipe or store bought. If anyone needs more specifics I will measure next time I make them
