Safeway has ground beef on sale and they emailed me a coupon for butterpan buns, so I decided to make bbq sliders. Stuffed them with Dofino cheese and bacon bits, and topped with cheese slices and sauteed onions. Served with a giant salad.

I made turkey soup tonight.
I made Jamie Oliver's turkey chili...with help from Mr P and the Penguinettes..
GF made me spaghetti!
for dinner i did, scrambled eggs w/scallions and a slice of whole toast
bag of postatio sweet chili flavor
and four truffles
lunch was a happy meal of chicken wrap- used coupon $2.99
These last few days, we're not really eating on schedule... drat the holidays!
Last night was garlic sausage sandwiches with coleslaw.
Tonight, husband will be cooking - I asked, he said yes since we'll be all here for supper. He'll make pork schnitzel, and we'll have smashed taters with it as usual, and a cooked veg of some sort.
Oh, I can already taste it....

For new years eve tonight we will have all sorts of app's and stuff. Not sure what my cousins will be making but I'm sure it will be just fine. I am feeling better than I did yesterday so can't wait. ;)
Last night was one of those, " whdya want for dinner ? " nights. Kids were going out, whatever eh?
So DH heads to WM and gets 3 packages of those pearl sized fresh potato gnocchi and three decent sized skinless/boneless chix breasts, within 45 min we were eating a scrumptious meal, the 4 cheese white sauce, sauteed onions, bell pepper slices, sweetlets and I cooked a whole pkg of mushrooms till almost caramelized, then added 1/3 c Ice Wine jelly and 1/3 c Fig infused vinegar, let it thicken, they were served on top.
Leftover Shiraz from Xmas, wow, what a nice meal. Kids lost out till later. lol!!

Tonight we are just making a meatloaf and salad. Nothing fancy, but does the trick.
i'm marinating chicken thighs with hoisen sauce, fish sauce, curry and cinnomen powder and will bake in oven later today.
still have to finish left-over asian noodles.

back on the diet.....Christmas was cruel.
Last night was "faux" tacos using the st yves ground stuff. Tonight is the leftovers and any others I find lurking in the fridge.
On Tuesday we are headed to MIL's so we can visit with my SIL and BIL(the one that just had the heartattack) so I eill be making a "bouquet" of fresh veggies and a fruit one too. I'll post pics if they turn out worthy ;)
When those gals wake up from the sleepover, I am going to offer to make them breakfast Quesadillas! Have all the fillings cooked and prepped, if they sleep too long I may eat one too many!

Lunch today was bacon and scrambled eggs with onions. Haven't had bacon and eggs in ages since I am working two jobs and have to pack two meals with me to eat at work so I normally do sandwiches for lunch and pasta or sidekicks type stuff to take with me for supper.
Supper I had veggie lasagna with cream sauce. Store bought since it was on sale for 4.97 and the cheese alone to make one home made would have cost me $5. I had it with a side salad topped with bacon ranch dressing mmmm!

I used chicken drumsticks, and they were frozen when I started. I think I cooked them a bit too long. IMO, it would have been better if I'd cooked them briefly in the sauce, thickened it, then brushed it on and put in the oven. They were still tasty, but kind of stewed and falling apart. I could taste the peanut butter, which is a good thing!

the other day when i was at sobeys they had HUGE fresh turkey breasts on for 50% off. regular $20 on for $10 so i bought 1 of those and roasted it yesterday. holy cow, i cant imagine how big the turkey must have been. there was enough on there for a turkey dinner last night, DH late night sandwiches, DH lunch for today and theres still some for the next few nights and its all the white meat! made a small stock with the breast bone last night so i'll finish that up today for some turkey soup. wish i would have bought the other 2 that were there and froze them.

meeting up with my "aunt-in-law-to-be" (my fiancé's aunt) and not sure if we're going back to her place, or going out for dinner. If we go back to her place I have a feeling I am going to be in for some good ole Newfie cooking. I love being able to meet up with family you don't get to see too often. Living four provinces over will do that to you.
