used up some of the leftover turkey - cooked spaghetti, brocoli and a can of mushroom soup, 1/2 cup milk, s&p, cubed turkey all mixed together. yum. nice way to use some of it up.

Had enough of Christmas leftovers, so we had takeout. I had chicken fingers (this one restaurant makes them SO good!) and steak fries - yum!

Yesterday I made plokkfiskur for the first time since eating it in Iceland and loving it. It is a simple combination of boiled cod or haddock (I was lucky enough to still have some wild cod from Iceland), potatoes, onions, butter, flour, and salt and pepper. Everything can be done in a single pot! Mine turned out really nicely even though I didn't have the sweet rye bread to accompany it with.
I think tonight I am going to make a vegetarian stir fry with basmati rice. If I didn't forget to take out some meat earlier on, it would have been a chicken stir fry!
