Last night two of my girlfriends (my running buddies) and I made a delicious dinner of fresh linguine, rose sauce with chicken, broccoli, peppers, onions and grape tomatoes in it, with homemade Caesar salad and garlic bread with cheese. It was amazing, and really easy with three cooks in the kitchen. It was our excuse to carb-load because we are running our first road race today... But it's only 5k, which we run on a regular basis and don't need to carb-load for (not like it is a half marathon ). Oh well, it was delicious anyway and a nice evening hanging out ith good friends. And I brought a container home of leftovers for DFiancé - hopefully he will enjoy it as well.
I will say this - we went to the grocery store and I totally balked at the cost. We just split everything equally at the till, but my friends shopping strategies are completely different than mine. For example I told them I could have brought 2 chicken breasts from my freezer that I paid $5 for on sale (only buy Maple Leaf chicken- I am a bit of a chicken snob). Instead we spent $10 on store brand which wasnt cut/trimmed as well. The fresh pasta also killed us but unfortunately I had already used my BOGO Olivieri coupon. I could have easily saved us $20 but I didn't have my coupons with me. Oh well, live and learn. we could have easily gone out for my third of the bill but it was nice to be at a friends home and relax. Worth it in the end.

Fri I bought a ball of pizza dough at walmart. Used 1/2 of it tonight to make a panzerotti filled with pesto sauce, bacon and mozzarella..Did it first in a frying pan with a bit of olive oil, cooked both sides till lightly browned then popped the pan in the oven for 10 mins..
Served with spinach salad and raspberry vinaigrette.

" gobble gobble" hee hee couldn't resist that.
So I got soooo much help yesterday late evening, as I am sort of " out of commission " with the nerve pain. Anyways, DD was the chopper, peeler..DH was the " supervisor " for most of it. OH! and the comedian too ( like we needed a warm up comedian in there), however he did the heavy lifting and any dangerous big/hot pot maneuvers for us, so we laughed at his jokes.
DS was the observer and taster, he drew the right straw I think.
Got 2 Shepherd's pies done ( one diet, one regular) all the veggies par cooked ( carrots, green beans, gai lan and beets) so easy to just grab the servings through the week. BBQ roast pork loin all sliced up in sauce. One 2 kg bag cheese/potato perogies all boiled/then sauteed in butter for the guys. Just the spicy chicken breast strips to do today and the week is solid!

Last night had Chinese takeout - I had a combo with chicken fried rice, beef chop suey, ribs and shrimp. Husband just had dry garlic ribs, which he ate with bread.
Tonight will be Winner, Winner, Chicken Dinner - roasted whole chicken, smashed potatoes, gravy, glazed carrots and coleslaw.

After seeing & reading scrumptious post after post,
How the heck can Loocie come here to boast?
I'm making chicken burgers & salad to serve with lemonade,
& will hopefully BBQ in the shade,

It is so hot here!! Feels like 38 with the humid ex ! Salad with beans Mexican style and BBQ chicken for those who wantand of course slushy drinks! Homemade daquaris!!

I know, you're just trying to rub it in right? Well, I'm not impressed with all this cold weather and rain I feel like I should still be making huge pots of chili or stew....but alas, summer will return at some point
Tonights dinner menu will consist of SantaFe chicken breast, stuffed with sauted mushrooms and grilled asparagus, basmati rice and garlic roasted peppers and cauiflower. For dessert I made a raspberry and chocolate mousse, I did the chocolate mousse, then made a raspberry coulee and layered each adding fresh raspberries to the coulee.
