What's For Dinner?

I know, you're just trying to rub it in right? Well, I'm not impressed with all this cold weather and rain I feel like I should still be making huge pots of chili or stew....but alas, summer will return at some point

Tonights dinner menu will consist of SantaFe chicken breast, stuffed with sauted mushrooms and grilled asparagus, basmati rice and garlic roasted peppers and cauiflower. For dessert I made a raspberry and chocolate mousse, I did the chocolate mousse, then made a raspberry coulee and layered each adding fresh raspberries to the coulee. Maybe tonight should be a dessert first night

Lol! I thought it was hot everywhere!! I made gf scones this am before it got too hot!! No way do I even want to go stand by the BBQ Hopefully some of this "hotness" will come your way

Roasted the guys some skinless boneless chix thighs in the oven, after they were part way done smothered them with VH orange ginger sauce. Cooked till all gooey and thick. I have to use up those stock piled sauces, they are no good to DD and I right now. lol

Holly I'm with you out west in the cold although it warmed up a bit in the late afternoon - Made a crockpot corned beef and cabbage with potatoes and carrots - melted in my mouth!!

Tonight will be some of the leftovers from yesterday - roasted garlic smashed potatoes, gravy, stuffing, carrots and corn. There are some brown meat chicken pieces left for my husband, so I'll roast a few chicken breasts for my son and me.

Nice surprise, dh told me this morning that he is cooking tonight (thats his way of saying I'm taking you out for dinner), so I hear Booker's Crab Shake calling my name. I'll be diving into a huge bucket of crab legs......no, and nothing else, just keep those crab legs coming..ok, maybe a side salad

Note to self - don't roast chicken breasts at 7 a.m. - the aroma filling the house is much too heavenly, and it's going to be tough to just have toast for breakfast, lol!

Since dh is away ds is making homemade turkey burgers and black bean burgers for me!!

Last night I bbq'd burgers, corn on the cobb and taters. I also put on a few slices of bacon

As for tonight I'm not sure. I'll have to be inspired

last night was bbq'd pork chops, roasted mushrooms, onions and peppers on the bbq in foil, rice cooked in chicken stock, and corn. tonight was easy peasey.. chicken burgers/hamburgers and hotdogs! cherry jello for dessert
