Son was over for regular Sunday dinner - I made crispy oven-'fried' chicken thighs, funeral potatoes, and a salad of sliced cauliflower and radishes with Italian dressing, sweetened up a bit.
I had to limit how much of the potato casserole I could have because of all the dairy, but I couldn't believe how much of it the two men ate! It's a fave, that's for sure!
...have bits and pieces of veggies in the fridge, so think I might make a beef stew and use up all the veggies...
Leftovers from yesterday- I just need to reheat-chicken wings, pasta and sweet potato fries.

I am thinking chicken fahitas tonight. Have fresh BLSL chicken breast, wraps, peppers, cheese and sourcream. Will pop in the store on the way home and grab an onion (.99 lb for sweet onions at FL )
Change of plans last night, pulled a package of two pork chops which I browned up in a frying pan with onions. Found some left over rice in the fridge as the bottom layer of my casserole, topped with half a bag of frost bitten green beans, topped with the pork and onions and then a mushroom sauce I made using a can of cream of mushroom soup. Pretty good but apparently it was a little dry when Mom reheated it for her dinner. I would make again.

Its been so hot here since Friday....total heat wave so no cooking unless its on the bbq. I am trying to eat fresh and healthy and mainly plant based.....so I think it will be a Ceasar salad with lots of extras like cherry tomatoes and red onion.
Sausages, Saurerkraut, baked potatoes and veggies all on the BBQ, weather permitting.
I ended up making a stoup...not exactly a stew or soup...lol..but I must say it turned out excellent, lots of leftovers for tomorrow...will prob freeze some too

It's HOT, so I made a big macaroni salad and we'll BBQ burgers.

I had polenta and homemade pasta sauce, DH and the kids had chicken Alfredo that DH made. He loves using those Ziggy's packages of fresh Fettuccine and Alfredo noodles I grabbed reduced from NF.
We usually get hockey pucks for frozen burgers, just whatever...
However, Sobey's has on their Sensations by Compliments burgers on for 8.99, eight burgers just over 1 kg. - today we made the Prime Rib ones - OMG! So delish, so juicy and very flavourful. Not a lot of crap added, and wow you can taste the difference. They were a winner, for sure.
I agree Nat, that is why many times we make our own burgers from the leanest ground beef, then the additives are only things we know and love, lol! A few times I've bought the frozen Marc Angelo's turkey burgers, these guys raved about them, I say they were just " ok "
I'm not entirely sure what's on for supper, but pretty sure it's in the beef family. We're getting a quarter of grass-fed bed delivered this evening, and depends on how much I have to do to put it away, etc.
Last night we grabbed a pizza on our way in from grocery shopping, convinced Mom to split a pizza instead of each getting one plus we picked up so it was less than half of what we normally pay.
Tonight will be Homemade burgers, not sure on the side yet will see what Mom whips up as she is home today. We have potatoes (Frechco $0.97/10 lb bag), Asparagus ($1.50/lb Freshco last week) coming out our ears so maybe something with one of those.

I bought chicken thighs at Walmart since it was on for 1.86/lb so we had shake n bake last night, along with baked beans and coleslaw. Tonight I'm making Maple Leaf Prime beef in red wine sauce. It's just heat and serve so hopefully I won't heat up the house like I did last night. I went to Safeway yesterday to get coleslaw and found the beef on sale. My Safeway always marks those Maple Leaf meals down 50% a good week before expiry. I like making them with stirfry veggies and rice. I just make a bit more gravy ;)
Cooking tip: heat the flour in an empty pan until it starts to brown, then add the butter, then beef stock. It makes much better tasting gravy. Also, instead of bouillon, get the au jus if using a dry stock concentrate. A cook taught me that and it does make a better tasting fake gravy.
Great tip! I like fake gravy :) I like fake gravy on potato salad...its kinda weird but its good! I worked at KFC for 7 years in my teens...we must have made every combination possible.
Its movie night again - yes, this is becoming a habit! This time I am going with my male roommate to see San Andreas in 3D. :cool1: We are also sitting in the D-box (multi-sensory) seats which should be a riot since there are several earthquakes, a tsunami and helicopter crashes etc. I am really excited!
I found a coupon in the Entertainment book for 2-4-1 burritos from Taco Del Mar so I think we will smuggle those in and hopefully make it through the movie without a lap full of beans.
