Last night I made mushroom and egg quesadillas (so delish!)
Tonight DH is going to a bowling party organized by his work, so I am making fried eggs on rapini with cheese.
Yes, that's a lot of eggs, but eggs are my #1 craved food right now, probably due to their overall awesomeness ;)
And I'm just realizing that with all the eggs I eat and how much I talk about cooking eggs, I really should contact the egg farmers' marketing board and request that I be made a spokesperson for their products. I will agree to be paid in eggs just to sweeten the deal :)
We're being bad and making a low-fat chicken Alfredo with loads of steamed broccoli and peppers mixed in, served over fettuccine.
we go through a ton of eggs too... my 2 year old can eat her weight in them i bet. i only buy from a local farm (dont like store bought) and it's a bit of a drive to get them but nothin' says yummy like a fluffy omlette! hmm..maybe tonight for dinner? thanks for the idea!
I have to admit I have been in a cooking slump, I take so much time to make dinner only to have someone say "that's yucky" (and thank goodness it's never my husband! lol)
Tonight I am playing safe and making hot dogs and sweet potatoe fries...

When I was pregnant I couldn't even look at an egg - and curses to anyone who cooked one in my general vicinity, it just grossed me out. It was odd, because I, too, am an egg-lover.
Yes, we had some for supper last night - I made a salad with romaine, carrots, cucumbers and cauliflower, with six hard boiled eggs cut up, with a sweet mayo dressing - it was awesome!
Along with that, we had a tuna-noodle thingee in a mushroom garlicky sauce - yes, I'm on a mushroom kick! Well, garlic, too, lol!
i will be making a pork shoulder stew with carrots, turnips and parsnips for the weekend.

Dinner will be whatever meat I decide to take out of the freezer. I am thinking a garlic (see!), ginger sesame beef stirfry with loads of broccoli and peppers, carrots and peas. Served over rice. I think that'll do :)
i was going to make french onion soup and toasted subs but i dont want to drag my kids to the grocery store in a downpour.. so i pulled out some porkchops to bbq (hopefully it stops raining), a long grain rice casserole with veggies, broccoli. maybe soup tomorrow.
Tonight: Cheese/tomato quesadilla's with salsa..
and a salad with romaine lettuce/tomatoes with olive oil/vinegar dressing.
Using the leftover rice to make a stirfry with roasred corn, edamame beans and scrambled eggs :P Time to clean out the fridge ;)

Got a call this am that my parents are showing up for a visit as they're putting their motorhome away in storage today at 3:30PM a half hour away from my home, for the winter, thus the surprise visit otherwise I don't see them often as they live 2 hours away. Which means for supper (sigh) so instead of dinner for 7 it's now 9 (sigh sigh sigh), so I got the creative juices flowing to make a tasty & filing dinner for 9 without breaking the bank and without feeling cheap as I said I don't see my parents often and normally make a really amazing dinner when they come but cannot this time because of circumstances.
Today is roasted sweet patato curry soup (I used the 2x Europes Best Roasted Sweet Patatoes) and we are also having a warm rice salad (cooked cubed seasoned chicken breasts, 1 bag of Europes Best Roasted Tuscan blend, greek salad dressing, can of red kidney beans, 1/2 bag of frozen brocoli, salt & pepper and will top with a touch of cheese.
