A big ole pot of homemade beef barley soup. DH makes THE best beef barley soup ever.
At first, it seemed a little nuts--the idea of eating soup on such a stinkin hot day-- but it was surprisingly perfect. A light meal with lots of salt and oddly enough, eating something hot actually cooled me down. Go figure!

Short ribs, Chinese eggplant and two carbs! (I actually had this sometime last week.)
I honestly can't tell you what the marinade was or what the sauce was, as they were both pre made by my papa..
..but I cooked it and it was yummy! The ribs were sweet/salty and the eggplant had some kind of soy based sauce on them.

Lat night I made fish sandwiches. I used nice thick pieces of cod that I had blackened, they pan fried. I made a garlic aole with a touch of hot sauce in it, put it on a panni roll (for dh, mine was a gluten free UDI'S roll) and topped it with fresh, crunchy lettuce and tomatoes.....it was soooo good.
Tonight I am just going easy. Going to take out some homemade chicken & rice soup from the freezer, and serve it with hot pastrami on rye. I will serve dill pickles and pickled veggies on the side (down to my last 5 jars of pickled veggies) This year we will have to do more pickling.
We all need a little sunshine every now and then

Last night I made an Italian chicken and gnocchi soup - It was the most delicious ever - It has diced carrots onion and garlic some quartered mushrooms, shredded chicken, canned diced tomatoes , chicken and or beef stock, gnocchi, bay leaves and fresh basil - I had two bowls and DH asked why I don't make it all the time - Super easy to make!!

well it was salad for me (lunch) and maybe another salad tonight ( dinner) Just too dang hot, no appetite. DH and DS took roasted pork loin with those beautifully dark and crusted roasted taters again. I feel so out of sorts, I actually wanted a nap, as I was preparing my salad...maybe next time I will be like the puppies here and do both.

terrible dinner! wasted my money on bourbon take out $7.29
had mashed potatoe with corn and honey chicken, the chicken was all batter pieces and too sweet
it was better the first time, i had it with bourbon chicken.

beef barley soup, heavy on the beef, the barley and the veggies. i don't like wimpy soup
whole wheat ditalliano toast on the side.
the girl and I had a very happy, yummy meal.
hubby had his own dinner. i made a curried meat dish that is called pasanday. honestly never heard of it til i met him and he'd whine for all the foods he wanted to eat that he grew up with and i am miraculously supposed to know about, ugh.
small pieces of thinly sliced veal, stewed with caramelized onions, yogurt, ginger, garlic, ground almonds and some spices. served with *drumroll* roti. freshly made, i hate eating it, hate making it, but he whines! UGH!

Tonight was pizza favorite meal in the moving time...no I am not moving I am im love with pizza and hamburgers ,and hot dog..all the cool stuff in summer
Tomorrow will be a quebecese meals witch is called poutine...fries, sauce ans cheese !!!That's my day to a great end of the week!!!

My dad and I collaborated and made cold noodles, Vietnamese style!
Rice noodles, thinly sliced pork marinated in lemongrass, soy, cooking wine &c., sliced egg/cucumbers and Asian greens.
The sauce is made of white vinegar, raw garlic, brown/cane sugar, fish sauce, lime and a bit of chili paste with a touch of water to dilute.
Super refreshing and perfect for hot weather!
His original plan was to make noodles in hot broth...but the a/c wasn't on and it was nearly 40C outside...it was not going to happen. lol
Now that the a/c is on, I'm shivering in a hoodie and sweatpants!
