I hope this will turn out. I started to get everything ready to build my massive lasagna about 2 hours ago. Meat browned...check! sauce warming....check, cheese grated....check, spinach cleaned....check, Parmesan for sprinkling....check, oven ready lasagna noodles....check, Only got 3 layers high in the construction ( 6 noodles per layer ) and there are no more noodles!! PANIC!! I tossed in a layer of my GF elbow macaroni and built on that, then last layer was sliced Polenta (commercial type so easy to use ) and sauced, spinached and cheesed my way to the top!
It does smell good already, but it is gonna look weird when I slice it!!

once my roast was done yesterday, I didn't feel like doing much so ended up making a couple of wraps from the pork, used tomato, lettuce, shredded italiano cheese and ranch dressing then nuked for 15 secs...it was different but really good..so I have lots of leftovers, saved to au jus to make gravy, so hot supper later without too much effort

Back from Travelling and Vacation so it is time to get back to cooking, only downside is I am extremely sick and have zero ambition to cook. Mom was home last night and made Meatloaf, Steamed Cauliflower, with Mashed Potatoes and Gravy so yummy. Thinking I might just have left overs for dinner so I really do not have the ambition or strength to cook tonight and I am on my own for dinner.
2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

I ended up teaching this afternoon, then LO had gymnastics at 5:45pm. When I got home from work I whipped up some hashbrown casserole, salmon fillets in lemon juice in another oven dish, steamed frozen broccoli, all with a glass of milk. Dh stayed home, but fell to sleep on the couch because he isn't feeling good. He forgot to put the salmon in the oven and turn on the broccoli when he was supposed to. I finished cooking supper when I got home, 6:30pm. So the salmon fillets ultimately didn't turn out (my first time trying this recipe, usually pan fry it). The rest of it was pretty yummy. Leftovers for my lunch tomorrow.

Now that it's Lent, we're having two fasting days a week.
Tonight was linguini with garlicky mushroom sauce, can of flaked tuna added in.
