curious what was at the bottom of the freezer, found a bag of perogies, 3/4 bag of Janes nuggets, and made up a batch of fried rice with many diced veggies to go with. ( cleaned out most of the crisper doing that ) and also added a whole bag of sauteed large shrimp to the rice.
I might try doing that again this week.....treasures lurk near the bottom of the freezer.

So torn I was planning to make a nice Potato Soup and it is perfect soup weather here, wet and cold. BUT I was looking in my fridge last night and discovered we have a lot of leftover side dishes that need to be eaten up (not sure how this happened as we aren't doing thanksgiving till this weekend which will mean more leftovers). So now I have to decide to make the Potato Soup or do I tackle some of the leftovers.

Oh!!! if anyone STILL has any stuffing leftovers in their fridge I found a delicious and creative new way to use it up from page 104 of the October Issue of Canadian Living Magazine.
The heading says " Just Waffle It " and basically you spray your waffle iron with your oil of choice, add as many beaten eggs as necessary to your bowl of leftover stuffing, mix well ( so it'll hold together better on the waffle iron ) .....so pretty!
We just happened to have lots of gravy and cranberry sauce leftover too, so with just a bit of shredded turkey meat placed on top of each waffle, then the gravy? Pure heaven!

Decided to use up some leftover mashed potatoes and pulled pork from the freezer and turned it into a BBQ Pulled Pork Sheppard's Pie.
