Too many holiday parties these past few days.....I should have a bowl of water for dinner. ugh. Will be a simple light dinner tonight.
Tomorrow night- Roast beef with potatoes and green beans/carrots.

Ground Beef Patties with peppercorn sauce and mashed patatoes. Canned pears and fruits cake for dessert.
The goal is to live day by day not to much thinking hahaha !!!!

Using leftovers from a pork roast, I made a pork stir fry w/ rice.
We normally buy reduced sodium soy sauce, but VH had bottles of regular for .97
Was not prepared for the salt. Yikes!

Last night I boiled up 2 pkgs gluten free penne and 1 pkg regular penne, used 6 jars of Classico white sauce ( 4 cheese I think ? ) added lots of diced red onions, broccoli and cauliflower crowns, and sauteed chicken breast chunks. That should hold them until ??? maybe Thursday night. One can hope.

I'm back cooking... sort of, with lots of help from my husband since I don't have a lot of strength and can't use two hands for anything when standing/walking.
M&M's tourtiere; roasted potatoes with onions, garlic, and spinach; corn for me. At the same time, I cooked weenies and beans casserole because there was room in the oven - most of that will go to our son, because it's one of his faves.
Cooking/prep is totally exhausting! My shoulders are killing me - especially the right from peeling and cutting potatoes and onions! Man, the things we take for granted when we are healthy!

Thanks, pady, I'll just have to take things slower... After all, somehow my husband didn't starve the past three months while I was in the hospital, he was cooking most of the time!
