we are on our own for dinners for the next few days, my hubby is back at work (he works in the hospital)
i think me and DD#1 will have turkey sandwiches and chips, pepsi to drink, that will make my DD#1 happy for sure
DD#2 will have her baby food

Fend for ourselves tonight so I had a chicken wrap and father is having spaghetti dessert is carrot cake.
The goal is to live day by day not to much thinking hahaha !!!!

We took a Turkey out to make some more room in our freezer so we will cook this up today. We are not going to do the full Turkey meals with Stuffing and everything but instead will break it down, eat some of it and freeze the rest to be used at a later time. Tonight will Turkey in some form.
2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

We got a amazing deal on boneless, skinless chicken legs so I grabbed a few packages. I have never had them before but I am guessing they are going to somewhat like chicken thighs so we are going to try them tonight in Chicken barley stew.

seems like its turkey or chicken night tonight! I defrosted a turkey yesterday and it is roasting in the oven right now. I used lots of garlic cloves for the turkey with BBQ spices and then smothered the turkey with bacon. Yummy!!! Also i cooked up some cranberry sauce this morning. All this with mashed potatoes and turkey gravy.
So i guess we will be eating turkey for a while: hot turkey sandwiches with home fries; club sandwiches, turkey salad, turkey pot pie; and freezing the carcass in batches to make turkey stock and soup. Now thats stretching a dollar!

i got a big bag of mini eggplants, some will be steamed then stir fried with garlic, ginger, oyster sauce etc. (eggplants soak up oil like sponges when stir fry so if you steam them first then fried you only need a little oil); serve with white rice
the rest of the eggplants will be roasted and go into chicken & eggplants puree for baby

Decided to do my Easter Egg hunt early, which is actually a deep dive into my small freezer...why is the bottom so dang far down?? Found a large whole chicken!! Roasted him up in the Air Fryer, then I just had to cut some fresh cut red spuds in my fancy chip maker thingy...deep fried them.
Another meal for the guys made a day ahead.
