Yes just in the process of simmering it down now.
8 stalks celery
3 big onions
3 big leeks (I keep a fair bit of the green part too)
10-15 smallish(3 inch) potatoes
broth (I used the Knorr, but if I had my own I use it too)
milk
olive oil
salt, pepper, garlic
I use a big pot (15-20 litres, just guessing but it's pretty big)
chop up oinions, leeks, celery and sweat them off in the pot with olive oil. I put the lid on so they kind of get steamed, taqkes about 15-20 min
Add 8-12 cups of broth or up to about 2/3 of the pot, salt, pepper, garlic as much as you can tolerate. LOL
SImmer for about 20 minutes then add the cubed potatoes. Once that boils they simmer for 10 minutes. That's where I am right now. LOL

Then put 4 cups of milk in the microwave for about 5-8 minutes so it is fairly hot. Add it to the soup and simmer for another 10-15 minutes. If you want at this point you can thicken it up with some conrstarch/water mix. For extra richness you can add a tablespoon of butter at the end and mix it all in and that's it.
By the way I use this recipe to make cream of mushroom also, just substitute the leeks and potatoes for mushrooms.Last edited by Patty Smyth; Sun, Oct 3rd, 2010 at 01:48 PM. Reason: sp

I just came back from the funeral. It was a small graveside funeral and I served as a pall bearer. I stood by my grandfather during the eulogy to make sure he knew he had people there for support.

Another fun day for me. Started with a few minutes of the Danny Kaye salon (great fun), then Nursery Nightclub (children's songs with a jazzed up tempo), Jenni Burke (anyone who can turn Wouldn't It Be Lovely from My Fair Lady into a jazz standard is amazing! ), City Salon Brooklyn (songs & songwriters from the city celebrated), Bob Marley Songbook (they had a bluegrass version of Buffalo Soldier by a singer/violinist named Miranda Mulholland, she is wonderful!), Mississippi River Salon (songs from the Delta), a taste of Denzal Sinclaire (very talented gentleman) & a cabaret singer named Laura Hubert (10:30 start on a Sunday night, but so worth getting home late). The highlight for me tho was a very sweet lady who can play guitar, ukelele, violin & sing (& her Dad has an Order of Canada!). Here's a taste of her stuff:

I made cream of cauliflower and cheese soup tonight. Its amazing Patty you make your soup completely different then me lol! How did you learn your way out of curiousity? My mom taught me mine
I use a rue for cream soups

Busy weekend for us.We got a new(too us)truck on Friday,torn our veranda off on Saturday and DH is picking up our new fridge today.Not sure why I am in a cranky mood??

I probably shouldnt of worn sandals to walk to boys to school. I feel bad I didn't send them in warmer attire. I had no idea it was freezing cold.

I was just looking for a crock pot recipes and found one for potato soup...but you need 4 cans of condensed soup to make it....lol!
potato soup sounds like a good idea but I think chicken soup will be made today for all the sickies.....
