Ha, Miss April, glad you got it!
Clear out the freezer night - I had most of a Dr. Oetker mushroom pizza (wow, yummy!), son ate a whole Four Cheese. Husband had a Delissio rising crust deluxe.

Ok. My dinner turned out sooooooo yummy I gotta post pics. DH could not stop raving about it all dinner long!!!!! It is super easy and most of it can be done ahead of time. Here it is:

2 nights ago i made the yummyist dinner, i had my mom and (step) dad over... steak with the club house rub marinade in hickory... threw it in the oven to cook, then threw on rice with onions and then had some broc and carrots, and some asparagus to use up... to satisfy my moms craving for at least one thing slightly unhealthy i made a cheese sauce to go with the veggies... was supper yummy... and for the first time since moving to this place (beginning of feb) i had all of my burners on at once, as well as the oven
last night it was a quick easy dinner... as i had my mom shopping till we dropped (literally for her she has bad pain issues) so i picked up 2 of the bbq chickens from rcss (one with the meal, one at the $1.00 off price) then we got home and i threw in some of the betty crocker cheese and bacon scalloped taters, and then nuked the easiest veggies in the world (green giant) had 2 different kinds, the herb and garlic, and the cheese sauced broc and cauliflower... yummy, but not as good as the first night my mom was here

Making a vegetarian Morrocan Stew tonight, kind of sweet and a little spicy, with sweet potatoes and some raisins, veggies, and a little peanut butter added to make it "Moroccan"..yummy

Ok. So after so many Rep's asking for the recipe here it is:
Grilled Talapia with Coconut Basmati Rice and Mango Salsa:
MARINADE:
1/3 cup extra-virgin olive oil (I used canola since I ran out of EVOO)
1 tablespoon lemon juice
1 tablespoon minced fresh parsley (I used flat leaf kind)
2 cloves garlic, minced
1 teaspoon ground black pepper
1/4 teaspoon salt
2 (6 ounce) tilapia fillets
Marinade fish for 1 hour only
MANGO SALSA:
1 large ripe mango, peeled, pitted and diced
2 tablespoons minced red onion
1 tablespoon chopped fresh cilantro
1 jalapeno pepper, seeded and minced
2 tablespoons lime juice
1 tablespoon lemon juice
salt and pepper to taste
Set aside. Heat BBQ grill to MED/HIGH. Grease grill before placing talapia on. Wipe off the excess marinade and discard leftover marinade.
Grill 3-4min per side or untill no longer translucent.
COCONUT BASMATI RICE:
1 1/4 cup basmati rice
1 can od Coconut milk
1/2 can water
pinch of salt.
cook till tender
Then sit back and chow down!!!!
