Today I'm baking Apple Brandy Spice Cake from a recipe that my mom used to make at Christmas time. I divide it up into small loaf pans so I can give it as presents. It smells and tastes heavenly.

I made peanut butter cookies for my friend for when we exchanged gifts. She loves those cookies. They turned out great and I ate pretty much all of them after she left.... :p

Over the last couple of weeks I have been making goodies for family, friends, neighbours, and co-workers.

I made buttertarts too - some with just raisins, and others with walnuts and toasted coconut (because I don't like raisins).
Also made cheesecake squares.
Got everything ready to make spritz cookies - husband had to go dig out the cookie press from the basement because it wasn't unpacked yet - BUT I used a new recipe, because I wanted them to be more like shortbread, and drat - though they pressed through fine, they grew too much during baking and lost most of their designs. Too buttery, I think. However, they tasted yummy. Glad I only did one pan, though, because then I added some coconut, sliced almonds and poppyseed, made small balls, rolled in coloured sugar - and they turned out nicely.
Baking hint - the new Neon food colouring by Club House makes really nice colours - a nice violet, light lime, muted red, and peacock blue.

Made peanut brittle yesterday - but it needs a new name, maybe just peanut candy?
I couldn't find the candy thermometer, so couldn't use my usual recipe and found one on a blog for microwave peanut brittle.
Well, I didn't have enough corn syrup, so started nuking it, checked and it needed more liquid, so I added a bit of water - finished the recipe, put it out to cool - in blobs, instead of one big sheet.
So it's kinda softish - not 'brittle', but wow, is it ever good and creamy-ish. A good 'mistake', which can't be recreated since I'm not sure how much of the corn syrup I used (end of the bottle, so I just drizzled it in), and how much water I added.
Also, my husband had once mistakenly bought peanuts salted in the shell, and I didn't like to just eat them as they were, so I shelled them all and used them in this recipe. Really good because it's the peanut which is salty, not just salt on the outside.
