Although I bake a lot, I don't tend to bake breads or cakes. I am looking for a good recipe for vanilla cupcakes and icing, probably buttercream. I want to practice baking cupcakes for our twins' 1st birthday at the end of the month. Any suggestions? I'm going to do 1/2 pink and 1/2 with blue icing. Dh laughed when I told him that we will sing them each happy birthday, even though they won't remember.

Trophy peanuts on for $1 and Kraft Natural peanut butter at $2.99 = peanut butter cookies with peanuts. You can make a heck of a cookie for just peanuts.
1/2 cup margarine
1/2 cup peanut butter (unsweetened)
1 cup white sugar
1 Tbsp molasses
vanilla
1 egg
1/4 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1 cup all purpose flour
1/4 cup cornstarch
1 cup salted peanuts, chopped
1 Tbsp (1 inch) balls flattened = 36 cookies
350 C 15 minutes or until no longer wet-looking

RHUBARB STRAWBERRY CRISP (excellent)
3/4 cup sugar
3 tbsps cornstarch
3 cups sliced fresh rhubarb (or frozen, thawed)
2 cups sliced strawberries (or frozen, thawed)
1 cup quick cooking Quaker Oats
1/2 cup packed Brown sugar
1/2 cup melted butter (i used a bit less)
1/3 cup flour
1 tsp cinnamon
Preheat oven to 350F
In large bowl, combine sugar and cornstarch. Add rhubarb and strawberrries; toss to coat. Spoon into 8`` square baking dish.
In small bowl, combine oats, Brown sugar, flour, cinnamon and melted butter until mixture resembles
coarse crumbs. Sprinkle over fruit. Bake at 350F for 45 minutes or until fruit is bubbly and tender. Makes 8 servings.
NOTE: If using frozen rhubard and strawberries, measure while still frozen, then thaw completely. Drain in a colander but do not press liquid out.
Very easy and simple to make. Enjoy.

Hummingbird cupcakes - have never made the cake before, but had all the ingredients so I thought I'd give them a whirl. They look and smell great, will taste after I frost later.

at 7:30 this morning i made a coffee cake. I also made my own garlic butter (put cloves of garlic through a garlic press and put in a small container, add margarine, mix (you add garlic and margarine to taste); and there you have it).
Then i made a beef and barley soup using the recipe on the Campbells Beef Broth container. Turned out delicious!
I also made a huge pot of borscht using fresh vegies.
And now im pooped. I need a break!

Yesterday-a batch of banana oatmeal coconut cookies (substituted unsweetened shredded coconut for milk chocolate chips).
So many delicious treats in this thread-I need to call this "what to bake when you crave something homemade NOW." It's like a bakery/coffee shop-hard to choose just one thing!Last edited by Ciel; Sat, Jul 30th, 2016 at 12:48 PM.
