Last thing you baked?

Muffin cake, which is simply muffin batter baked in a cake tin. I miss the muffin tops, but it's definitely easier making one cake than dividing the batter to make individual muffins. I have to eat a fair amount of fiber every day, so mine are high-fiber regardless of what flavor any particular batch is. In the past couple of months, I've made chocolate, lemon poppy seed, butter pecan and carrot

In between my adventures this morning with 2 mourning dove baby birds in our apple tree, I decided to use up the gigantic bag of marshmallows and the extreme Family size box of Rice Krispies, along with some of the S'Mores mix to make up 4 trays of ooey, gooey, crunchy Squares.
Three trays are going to DH work tomorrow, those guys love these things and 1 tray stays here for us. Not really baking BUT more elbow grease mixing.

Currently baking lemon blueberry crumble muffins since I have blueberries coming out of everywhere! I snuck a bite and they are so good I’m doing a double batch.

It's been a " no homemade bread " zone here since Jan 2022. Had to face the reality of my health needs to drop some pounds. I switched over totally to Lavash Sheets ( high fibre , low carb option ) That being said, the guys LOVE the large homemade kaiser bread so much that I baked one up on Thursday night. Try as I might to abstain, the loaf called out to me and I ate 2 large slices with butter!

I mean just look at this bread! can ya blame me? lol.

as Britney's song goes " oops I did it again"...... This morning I had to bake up yet another loaf, same bread, same size.
The guys have absolutely promised me that not one slice of it will go moldy or get left behind. Bless them.

One pan of No-Bake Chocolate Lunch Box Treat, 1/3 batch of confetti squares (finished the bag of butterscotch Chipits). 98 oatmeal kiss blossom cookies. Banana oatmeal chocolate chip squares 9x13” pan, and 2 dozen banana chocolate chip muffins. Most of what we’ve baked today is headed for the freezer. Ds has been helping a fair bit. Anything nut free is intended for school lunches.
