    Blueberry muffins and banana nut muffins. I still have a TON of blueberries to use up and I have already packaged and frozen lots for smoothies, etc. Anyone else have any good, healthy recipes that use blueberries?

    Last night, I had grilled fish. I went to the supermarket to buy the paper on fish packages, buying spices for marinating fish. My mother eat and tasty compliment. I'm happy.

    Consider making pies, crisps, tarts, jams, pancakes, scones, blueberry sauce, add some (pureed) to lemonade, ice cream, frozen yogurt or sorbet, popcicles?

    Big question....how do you make cupcakes taller? I've been baking all these cupcakes for my friends wedding, taste testing & found the best tasting recipe for both my carrot & chocolate cupcakes, BUT.....they are coming out "small." I've noticed my cupcake tins are on the small side so I can only fill them 3/4's full & hope they rise to the top of the muffin liners (using Reynolds foil lined cupcake liners so no "bake through").

    I want my cupcakes to be perfect for my friends wedding on Saturday so any last minute tips would be greatly appreciated! I also found cupcake 1/2 moon wraps to put around the cupcakes to make them prettier, but at $7 for 6 I couldn't justify spending that much for them. Unfortunately I don't have time to cut the delicate lacey details that I like so I think I'll have to for-go that luxury. I bought ribbon & little jewels to hopefully have time to wrap the plain white wrapped carrot cupcakes with that to pretty them up a bit.

    SO...anyone have any tricks? Do I need to buy new , taller cupcake tins? Are they commercial grade? I replaced my baking powder so it's not that.

    Lots of yummy baking going on here! I will try to take pics of the final product this weekend & post my success!

    I picked up 12 lbs of strawberries this weekend (mostly for freezing) but took advantage of having some fresh sliced and baked up a strawberry coffee cake

    Vegan Cinnamon Raisin Challah! Still developing the recipe, but as it is it's near perfect.
    Fluffy yet chewy innards and a medium thick crust loaded with streusel (my favourite part)!
    My bf is super happy, because he hasn't had challah in nearly 20 years. lol
    Now he can have challah during Jewish holidays like everyone else! :D

    **Excuse the state of my kitchen walls. We just got our new counter top installed and have yet to tile the back splash!

    Yesterday I made a lemon curd cream tart with graham cracker crust and topped with blueberries and raspberries It ws really nice and tart but smooth/sweet!

    oh and just now I did my toasted coconut (from a fresh coconut) cake with a lime cream filling

    I use blueberries (and other fruit) whenever I make a reduction sauce say for chicken or whatever.
