    I've been back less than a week and already the family is asking me for more bread! Not sure if I have time to do it as dh wants to head out camping this afternoon, but I'm going to try and make some today if I can.

    1. Preheat oven to 350°F. Coat 2 9-inch round cake pan with cooking spray. Line the pan with a circle of wax paper.
    2. Whisk flour, granulated sugar, cocoa, baking powder, baking soda and salt in a large bowl. Add buttermilk, brown sugar, egg, oil and vanilla. Beat with an electric mixer on medium speed for 2 minutes. Add hot coffee and beat to blend. (The batter will be quite thin.) Divide the batter into the prepared pans.
    3. Bake the cake until a skewer inserted in the center comes out clean, 25 to 27 minutes. Cool in the pan on a wire rack for 10 minutes; remove from the pan, peel off the wax paper and let cool completely. Dust the top with confectioners’ sugar before slicing.


    I took 1 pk of sugar free vanilla instant pudding and mix a bit of reduced fat cool whip (which I found in a triffel recipe for diabetics) and put a small amount between the layers and added blueberries and raspberries on top of that layer.



    NOTE: I put the icing sugar on too soon and it kinda melted. I was in a hurrey

    Well I finally got around to making this harbie, with a few more modifications. My fiance is diabetic and my Mom can't have dairy, so I used soy milk instead of buttermilk - hopefully it's thick enough. I also don't have two 9-inch pans, so bunt cake it is And then I'll just use that as an icing rather than a filling. I will report back (perhaps with a picture) when it's all done).

    Made oatmeal coconut cookies yesterday. Turned out pretty well!

    Not nearly as pretty as harbie's for many reasons, but it was a big success, went over well.

    Mmmm.... the house smells so nice.

    I made two dozen 'cheater' cinnamon rolls.
    I used Pillsbury crescent dough - take out the dough carefully, unroll it on a floured counter and press the seams together, longest side facing you. Spread butter over, then sprinkle brown sugar, some cinnamon, and I added crushed pieces of almonds. Roll carefully, pinching any of the perforations closed which might open. Seal with a bit of water at the end. Cut in 12, put in greased muffin tins.

    The first set I baked were a bit overdone, but still yummy. I had the timer on for 10 minutes at 365 degrees, but didn't run to the oven when the timer went off.
    Second batch, I took them out at 10 minutes, they were lighter - bottoms still browned a fair bit, but more squooshy.
    When each tin came out of the oven, I brushed the tops with melted butter.

    They are good, and great for a lazy-day baker!

    Well technically I haven't baked this yet. LOL. Waiting for it to be "cheap" time for the hydro meter ...but later this evening I will be making Hawaiian pizza roll-ups for the kids for lunch tomorrow. Never made these before; hope they turn out ok. But my kids are sandwich snobs so a girl has got to be creative.

    update: The kids had them in their school lunches the next day at school and both came home begging for me to make more. I'd say that counts as a success!

    this morning my girls helped me make a loaf of cinnamon bread. It was a chilly wet morning and there's something warming about the smell of cinnamon wafting from the oven.

    I brushed them with butter I melted with rosemary and a pinch of garlic powder I am not a baker nor do I play one on TV but these are so freakin' good and easy

    Our grandson wanted chocolate muffins, so that's what I made for him.
    We don't eat any baked goods, so I only bake for him...usually his pumpkin muffins..
