We have so many lemons and limes and i don't want them to get old, and thow them out, so I'm needing recipes to use them up.Breads,muffins,pies,squares,....anything!
This thread is currently associated with: N/AArtificial Colors & Flavours in almost all our food... You should be concerned.Everyone should watch this...

you could juice them and freeze the juice for later baking? I just had this problem with blueberries and lemons so I made blueberry lemon muffins

I posted this in the whats for dinner but here ya go

Greek Style lemon potatoes! They were sooo good!!
I peeled about 10 small size potatoes and chopped them up
Then add
5 tbsp olive oil
1/4 cup water or chicken stock
juice from one lemon
1tsp dried thyme
1 tsp dried rosemary
salt to taste
pepper
2 cloves garlic minced
mix it all up add to pan and bake at 375 for 1.5 hours covered...I uncovered it for the last 30 min.
I also sliced up the lemon I used and added a few pieces to the pot...remove them before you eat lol

You could use the juice in salad vinagrettes? Or maybe some mexican-style recipes, like tacos that have a side of lime.
But, you could always grate the zest, and squeeze the juice into ice cube trays to freeze, then put them in a freezer bag.

Lemon Squares. I also use lime juice + mint on watermelon. The Lemon Yougurt Anything Cake (recipe from smitten kitchen) freezes excelent

Chop the lemon (or lime) in half and shove it up a chicken
Bake it in the oven (or BBQ it) and you've got a lovely lemony chicken (oh and leftovers go great on a salad!)

Glazed Lime Cake (like a poundcake)
- 3/4 cup butter, room temperature
- 2 1/2 cups powdered sugar, divided
- 2 large eggs, room temperature
- 1/4 cup milk
- 1 1/3 cups self-rising flour
- 2 to 3 large limes
- 1/4 cup sugar
Preheat oven to 350°F. Butter and flour 8-inch square baking pan. Using electric mixer, cream butter and 1 1/2 cups powdered sugar in large bowl. Beat in eggs 1 at a time. Beat in milk, then flour. Transfer batter to prepared pan; smooth top. Bake cake until tester inserted into center comes out clean, about 35 minutes.
Meanwhile, finely grate enough lime peel to measure 1 tablespoon. Halve limes; squeeze enough juice to measure 1/4 cup. Mix peel, juice, and 1/4 cup sugar in small bowl. Set lime syrup aside.
Using skewer, poke holes all over baked cake. Spoon half of lime syrup (about 3 tablespoons) over hot cake. Cool.
Whisk 1 cup powdered sugar into remaining lime syrup; drizzle over cake. Let stand 1 hour. Cut cake into squares.

LEMON LOAF
Ingredients
8 ounces butter
2 cups sugar
4 eggs
Grated rind of 2 lemons
3 cups flour
2 teaspoons baking powder
1 teaspoon salt
1 cup milk
1/2 cup sugar dissolved in juice of 2 lemons
Cream butter and sugar. Add eggs one at a time; beat well. Add lemon rind. Sift dry ingredients and add alternately with milk. Pour into 3 medium loaf pans. Bake at 350 degrees about 45 to 60 minutes. Turn from pan to cake racks. Drizzle lemon-sugar mixture over loaves.

I make a couple of recipes that use lime juice, but I don't want to spend big bucks on a couple of limes every now and then, so when I see a package of them on the clearance bin for a buck, I squeeze them and freeze the juice.

What about preserves? Like marmalade or lemon (or lime) curd?
Just a thought - sorry, I don't have an personal favourite recipes, or I'd share them, but that's a great way to use a bunch of citrus fruit.Better to remain silent & be thought a fool than to open your mouth & confirm it.
