Holy crap it's almost 7! I had no idea and I have nothing planned for dinner yet! Ahh! I guess it'll be some sort of frozen food tonight. Maybe chicken nuggets or something.

With all the fun and super deals at SDM today I forgot about planning dinner.
Food Basics to the rescue! They had the stove top on for .99, not bad.
I slice about 8 lg. chix breasts horizontally making thin wide slices, then egg-dip and bread crumb coat all slices on both sides.
Make the 3 pkgs of stove top in the microwave, but I add dried cranberries to it and a dash of ground coriander.
I place a layer of the breaded slices onto my lightly sprayed pan, so the edges of the chicken all touch each other.
Then spread a nice amount of the stove top on each slice and cover each one with another layer of the breaded slices. I guess it can be called stuffed chix breasts.
Bake 350 for app. 45 min, sometimes more.
Right after Thanksgiving I found some turkey breasts on sale and made this about 2 weeks after Thanksgiving, it was nice!

tonight was a quick dinner...had a busy day and was too tired to really cook so it was grilled cheese and bacon sandwiches
