As we speak I am making my first ever 100% from scratch cake!!! It is a toasted coconut cake with lime cream filling and sofar it is looking reeeeeeeeeeeally yummy
I also just finished making a big batch of "hamburger" cupcakes for the bbq tonightThe kids are going to looooooooove me!

I swear, as soon as it starts to feel like autumn, I get into a crazed "gotta bake!" mode! Yesterday I baked an apple crisp with McIntosh apples and a healthy bran/oat topping, and then I made a batch of chewy chocolate chip cookies (which I am trying to stay away from, lol). I have lemons and poppyseeds in the kitchen and want to make some muffins for me to take to school for snacks.

Me too. The cook/bake/freeze/can mania started early for me this year and I have been baking and cooking since the first week of August. LOL. My freezer is about to explode and still, I just can't stop myself. Most recent baked yummies were banana muffins and low fat blueberry muffins. My kids are muffin fanatics (thank goodness) because I am fanatical this year about making muffins....along with everything else.
Now that apple season is upon us, I am headed shortly to the orchard to pick a whack load of apples. Then begins the apple pies, apple crisp, apple brownies, apple muffins, apple streudel, apple cookies. LOL. Oh my goodness. Just talking about it and I'm drooling.
