last night was a ham, rice, and some brocoli with cheese, vanilla pudding for dessert. i caved tonight - dh is on afternoons so i made my 2 grouchy little ones KD and some diced ham. i had some leftover rice and ham.

Today was a lazy day - We had Hot Dogs with carmalized onions and corn on the cob (peaches n cream) with ice cream cones for desert

Roasted duck with a peach and cherry cognac sauce, served with a side of rosemary garlic potatoes and brussels sprouts.
It took a bit of prepping an babying, but the final results were worth it. I just love a nice crispy skin!
Plus, I now have a good amount of duck fat in the freezer. :D

Camping tonight and all the long weekend. I am sure I will be having a lot of coconut milk yogurt,rice milk,hemp hearts,and frozen strawberry smoothies
It seems to be the only thing I can keep down when my contstaint daily headache with migraine get bad

I am a very lucky Loocie today, as my neighbour has just dropped off a pan of her delectable lasagna & about 6 pieces of her fabulous onion flatbread. All I have to do is make a salad!!
(not an exact picture of her onion bread, but you get the idea!!)

OMG I would just die for a stockpile of duckfat!!!!! Have you ever tried to make french fries using only duck fat.......to die for, obiously it's something you only treat yourself to a few times a year, but OMG!!!!! The first time I ever tried this was in a restaraunt in NYC and I thought I died and went to heaven. Now, I covent my duck fat for this exact recipe.

Tonight we're having a chicken cesar salad with garlic toast. It's not to heavy and since we have to go out later this evening, I don't want to be in a food coma, lol

My sweet husband went and picked up supper at Sobey's - rotisserie chicken, potato salad, macaroni salad, and buns.
They make amazing chicken!

i'm making pork tenderloin for dinner tonight
i marinated it with olive oil, soya sauce, worchester, chili flakes and garlic
oven- baked.

We're taking my Mom out for dinner to a nice hole in the wall Italian restaurant (my Dad is on a 10 day fishing trip so she's getting a little lonely
)... super affordable restaurant, great food and portions bit enough for doggy bags for sure!
