We had our Neighbours water the vegetable garden while we were gone for 2wks to have the baby. They never picked a thing, so I have LOTS of zucchini to use up. I have 9 zucchinis on the kitchen table right now, most of them are large. Any suggestions on ways to use them up? You may want to keep in mind that I have a newborn baby boy.

Angela, hope things are going well for you!
Even if you don't find things to make with them right away, you can shred or cut up in cubes and slices and freeze for later use after you've blanched it for three minutes, then put in ice water. Drain and package.
For shredded, chocolate zucchini cake, yum!

We just shred the zucchini unblanched and freeze for chocolate chip zucchini cake which apparently my Mom made today - very envious
As for dinner tonight, I am going to a re-screening of "Trouble With The Curve" so dinner will be movie snacks. Today has been a horrible food day and my body is feeling it - must get back on track, tomorrow.

It's my first time making this (only because I bought a head of cabbage, and my husband also bought a head of cabbage...the same day...and he only goes grocery shopping maybe once a month if that!) and I must say it is as yummy as all the reviews that had was given.
Still have another 1-1/2 head of cabbage left...haha :0)

LOL, extra cabbage is never a problem at my house. I just cook it in a pan with a little bit of water and some chopped onion. Garnish with pepper.
Or, you could try some Moroccan chickpea stew (sorry, my recipe is printed so I don't have a link); it's chickpeas, cabbage, some chopped veggies, and a curry sauce. Super fast and delicious.
...or, just make some coleslaw or sauerkraut

Today has been a screwy meal day. DH is out of town on training and I had a 2-hour glucose tolerance test this morning. I only stopped feeling rotten around noon, and have just eaten drips and drabs of different things that would counteract how crappy that orange drink thing made me feel.
So far today, I've eaten a small container of greek yogurt (we'll call that breakfast); some carrot sticks; a baked sweet potato; some green peas cooked with a fried egg on top; and a few spoonsful of cottage cheese. I plan to make up for it tonight, by cooking portobello mushrooms with cherry tomatoes, cheese and chives and a cob of corn on the side.
DH is supposed to be back by 8 or so, so I am making an evening snack of peanut butter pudding (his favourite). We either do dessert or an evening snack (never both), so I figured I'd give DH a surprise as he's likely expecting popcorn or something similar.

tonight was homemade meatballs in a sweet and sour sauce, mashed potoatoes and broccoli with cheese.. no grumbles from the kiddies so i'll take that as a win!

Supper was pork chops, oven fries and tomatoes/cukes from the garden. I also made zucchini soup. I can't believe one plant produced that much zucchini.

Last night my son 'cooked' so we had M&M jumbo chicken wings and oven fries. I guess the veggie was the ketchup...
Tonight we're BBQing steak, so will make some sort of potato to serve with, and some sort of veggies.
(will have to google 'some sort' for inspiration, lol!)

I have no clue for tonight...I'm think easy so maybe brown rice mushroom burgers with sweet potatoe and a nice big red leaf salad.
For dessert my homemade strawberry, mango cocoa no cream ice cream!
