SOUP for you!! Does a body good!
I hope to make our wonderful lentil soup today if we have time..doesn't look
like we may, so tomorrow, then....it's so good.
Or...because I have a butternut squash here...the soup from last year's
Food&Drink magazine...served with a 1/2 pear in the centre of the plate...bum up!

A few people asked about the soup, its super simple
Cauliflower & Cheese
1 head cauliflower (chopped into small florets)
1 tbsp butter/marg (I use a light marg as it saves 1 pt)
1 tbsp whole wheat flour
2 cups fat free no salt added broth (chicken or veg)
2 cups water
1/2 cup milk
1/2-2/3 cup grated cheese of your choice (I used 1/2 skim mozza and 1/2 low fat cheddar)
Melt butter in a pot on low heat and mix in the flour to make a roux/paste
Add broth & water and mix paste in and bring to a boil
Add cauliflower and boil for 5 mins then reduce heat and cook until very tender
Spoon mixture into a blender (or use an immersion blender in the pot) and blend until no lumps - I find it works better in a blender if you do a little at a time
Add milk and cheese and allow them to melt over a very low heat
Makes 4-5 servings at 3pts each

It is not bad without the milk/cheese and then only 1pt(ish) but I dont want to eat it as much lol

^^ that is true, once you eliminate the " fat " flavour from the cheese/milk it becomes not as tasty, I can certainly relate.

It is filling enough as a meal without bread with the cheese though, so it works out the same as non cheese with bread

Thanks for the recipe for the Cauliflower & Cheese soup FallenPixels. I love soups and chili in the cooler weather. So nice to make a batch and have it ready for a few days.

I am happy to say I am down 15 pounds today! WOOT...
BF and I went vegan middle of August, he has lost 13 and I hit the 15 mark today. I can honestly say we both sleep better and feel better in general.
