last night was shake & bake chicken, a rice casserole with all kinds of veggies and a caesar salad. tonight was turkey meatballs (ground turkey is crazy cheap at FB this week!) with a sweet and sour - bbq sauce, broccoli and carrots, white rice.

Sunday night was spare ribs done in the slow cooker with a few potatoes and then finished in the oven. We bought the ribs that were on sale at Loblaws (an impulse buy but still a good deal at $3/lb), and there were leftovers as the packages were a bit ginormous.
Last night was spinach omelettes and roasted beets, so a super fiber-rich and nutritous meal to balance out Sunday's debauchery.
Tonight will be some of the leftover rib meat chopped up and mixed with the sauce, mixed with some veggies and cheese and toasted inside quesadillas. I plan to do some mashed cauliflower on the side as well as an ear of corn each.
Tomorrow night will feature squash, but that's as far as I've gotten toward deciding what, exactly, I'll be serving. I am thinking maybe a squash curry with some peas and a piece of naan on the side, but that's just a maybe.

Yum! I decided to make pork stew last week to use up some stuff out of the freezer. I used a couple tablespoons of dijon mustard as my secret ingredient (thank you, Michael Smith!) as well as some nutritional yeast for extra flavour and it turned out awesome I must say, though that with the dijon and nutritonal yeast DH was a bit skeptical as those two choices made it quite yellow!

Last night was vegan Mac and Cheeze MMm good!
Tonight chick pea felafels with a creamy tahini garlic sauce and Dijon mustard roasted taters with either a green salad or a green bean salad not sure yet.

glowworm, that's a great idea, since pork and mustard go well together.
Our cupboards and fridge are kinda bare (til shopping tonight and tomorrow had to wait til payday!), so I used onions, celery, carrots, cauliflower (cut tiny so it'll disappear but taste 'cabbagey'); some Italian dressing over the veggies; cubed pork on top, mixed with can of diced tomatoes in olive oil and garlic (never used them before!), added some garlic and stirred in about a quarter packet of french onion soup mix which was leftover.
I'll have to check in a bit if it needs more liquid - I'm never sure!
Yesterday we had fries with honey-garlic tenders and plain chicken wings from 7-11. Yummy, but no veggie value, so tonight will make up for that. We always eat stew with pickles, too (drat, wish we had beets left, my fave with stew, but it's going to have to be dill pickles).

Breakfast was coffee and toast with PB and jam watching the AZ sun rise.
Lunch was at the Talking Stick Resort and a buffet of yummy foods
This was dessert(s):
Vanilla bean and prickly pear sorbet, Sugar free pudding cup, fresh fruit
Cheesecake:
Dinner was just a ham sammy with pasta salad since we were still full and these:
white sangria with fresh fruit that I froze first

pizza pizza won out last night. cheese pizza for the kids.. ham, mushrooms, black olives and bacon for dh and i. we haven't ordered pizza in a donkeys age so it was a nice change.
bbq'ing some porkchops in the rain/drizzle tonight with some broccoli and sidekicks noodles. i might do a tinfoil pkg of onions/mushroosm/peppers and garlic just to use up some stuff in the fridge before we go away.
