Well I dont feel I want to sleep so now or ths week end I will do Rice Krispies Square and a fruit cake
In fact the fruits cke is so good that I eating on every desserts this week;so only a piece left...I will do another one lol

This past week I made a recipe from my fav website for "interest" stuff...Oatmeal Chocolate Chip cookies. Sounds simple, but this recipe was fantastic for the ingredients put into it!
I used 1/4 c Ground flax seed, 1 c whole wheat flour, 1/2 c walnuts, 1/4 c honey & 1/4 c choc chips for kickamongst the main ingredients of 3 tbsp butter, 1 c packed brown sugar, 1 egg, 1 or 2 cups large flake oats (would have to check), & 1 tbs water!
Even the kids loved them!

Red Velvet cupcakes (vegan with full of) cream cheese frosting!
We bought canned frosting for the 100% vegan ones.
I gave all 2 dozen away, but kept four for my family. It was too dangerous to keep anymore!
(This was one of those MAC cosmetics/baking trade offs I've got going with my friend. Whoohoo!)

oh well back to the drawing board I guess. tried to make some new recipe gluten free yeast dinner rolls. Even bought all new and different types flours and I thought it odd they did not double in size when I left them in a nice warm place for an hour.
I baked them anyways and now they look like little rocks! lol
I just checked my jar of yeast, it expired 6 months ago!! even though it was unopened and had been in the fridge all this time. ( ugh) Should have checked the date before I started.

Nat, it's been a long time since I have done the warm water/sugar yeast and let it sit and percolate thing...I usually add the pkg of yeast that comes with the GF bread mix right into my breadmaker with all the ingredients, so maybe I just did not have the water warm enough, or let it sit long enough.oh who knows?
It is a new recipe I took off the web, so I am not sure how accurate all the listed ingred were.
What I feel ok about is every time something does not bake perfect I freeze it till I can get around to grinding it into GF bread crumbs, so at least I am not wasting the cost of the flours.
This taxi-ing the kids to and from Univ ( both on different start /end times every freaking day ) is getting to me, lol!! ( first world problem)

I made macaroons yesterday, pink ones. Got about 40. Didn't even make any filling and there are only about 10 left. They are great even without the filling.

I baked chocolate chip cookies but I burned the first batch,
Keeping your eye on the time really is the catch,
Blackened cookies are not that appealing,
Even the dog wasn't interested in stealing!
The smell of blackened cookies did not liven up this place,
But I do have my signature goodies that are my saving grace,
If only Janetta was my next door neighbour,
I'd even help her with the measuring labour,
What pics she shares of her magical creations,
When I look at those cupcakes, I say hello temptations,
In moderation we shall bake & of course prevail,
Please let me know the details of the next bake sale.
