You can go through the whole process of kneading and rising and everything, but i just made it easier on myself and throw the ingredients in the breadmaker on dough setting before taking out and arranging it to bake.
1 cup warm milk
1 tbsp white sugar
1 tsp salt
2 tbsp olive oil
1/2 tsp lemon juice or vinegar (i used vinegar)
2 cups flour
2 tsp yeast
you will also need about 1/4 cup melted and cooled butter (but dont put this in the breadmaker)
Glaze- 1 egg yolk and 2 tbsp milk beat together
Grease a round pan. (I used a springform pan to I could remove it very easily) Preheat oven to 375
after the dough is done, punch it out on a flour surface and separate into four equal blobs. Roll each of these out until fairly thin (about 1/2 cm or less) brush each of these discs with the cooled butter and roll each up into a tube. (like a cinnamon roll)
each tube needs to be cut the same way. They will all be cut into 6 pieces. First the ends which will stand cut side down in to middle of the circle pan. Then cut the middle remainder of the tube into four equal parts sort of like triangles. >>> /\/\<<<like that. Arrange these triangle chunks into a circle around the middle.
Brush the loaf with the glaze and pop in the oven. Now it needs to bake at 375 for about 10 minutes then turn the oven down to 350 until the loaf is a nice golden brown. This should take about 20-30 minutes. I found that with my older oven it took closer to 40 minutes--- prob best to watch it.
Take it out and immediately brush the loaf with the remaining cooled butter.
Enjoy. It is best served warm and fresh from the oven. It has an almost salty exterior and is soft and moist inside.
I also made a second one where instead of brushing with butter I used different fillings, such as cinnamon and jam. This bread leaves lots of room for imagination and creativity.Last edited by krysta lynne; Wed, Oct 10th, 2012 at 10:29 AM.

Homemade chewy granola bars
Recipe type: Baking
Author: Bowen Close (Bowen Appétit)
Prep time: 15 mins
Cook time: 30 mins
Total time: 45 mins
Serves: 12-20
Chewy and healthy homemade granola bars, totally customizable.
Ingredients
- 2 cups (160 g) oats
- 1/2 cup (96 g) sugar
- 1/2 tsp. salt
- 1/4 tsp. cinnamon or other spices as desired (cardamom, nutmeg, etc.)
- 2 1/2 cups additions: dried fruits, seeds, nuts, flax meal, bran cereal, puffed rice cereal, crushed pretzels, chocolate chips … the combinations are endless!
- 1/3 cup (60 g) peanut or other nut butter
- 6 Tbsp. (89 ml) olive oil – canola oil, other oils, and melted butter will work here as well
- 1/4 cup (60 ml) honey, maple syrup, or Agave syrup
- 1 Tbsp. (15 ml) water
Instructions
- Preheat oven to 350F. Depending on desired thickness, line a square (8×8 or 9×9) or rectangular (9×13) baking dish with parchment paper, then lightly grease the paper with non-stick cooking spray, oil, or butter. Thicker bars are a little more decadent, if you’re planning on using this as a dessert.
- Process 1/3 cup (27 g) of the oats in a blender or food processor until finely ground.
- If necessary, chop up dried fruit and nuts. Raisin-size pieces are fine, but dried apricots, or apples, let’s say – should probably be chopped.
- Stir together all dry ingredients (oats, ground oats, sugar, salt, cinnamon, fruits/nuts/seeds).
- Whisk together wet ingredients – oil, honey, peanut butter, and water.
- Mix together the wet and dry ingredients, then spread in the pan. Press firmly into the corners and edges so the top is even.
- Bake for around 30 minutes, until the top starts to brown. Thicker bars will likely take longer, so you’ll need to watch them, depending on how much batter you’ve spread in what size pan. The edges will become deep golden and they may feel underdone in the center, but that’s okay. They’ll firm quite nicely as they cool.
- Let cool in the pan on a cooling rack for at least 20 minutes, then take them out of the pan using the parchment. Let cool completely before cutting.

homemade granola......for the first time.........it was so easy to make & very tasty.
