Food Recipes

- Cream Cheese Pastry Recipe:
1 Cup Flour
3/4 Teaspoon Baking Powder
Pinch of Salt
1/2 Margarine Softened (We use butter)
1 Package (3 ounces) Cream Cheese Softened
2 Teaspoons Sugar
In a small bowl combine flour, baking powder and salt. In a large bowl mix margarine, cream cheese and sugar until well combined.
Stir in flour mixture until well blended.
Baking temp and times all depends on the recipe and how you are using the pastry. We usually use it to make mini butter tarts.

White Bread
by dreamcatcher1962
- White Bread
3 Cups Warm water
3 Tbsp dry active yeast
3 tsp salt
1/2 cup white sugar
4 Tbsp Vegetable Oil
8 cups of flour.
1. Mix water, yeast, salt, oil, sugar & 4 cups of flour together. Let sponge rise until double in size.
( I usually leave it 90 minutes and cover the bowl with plastic wrap)
2. Add the remaining 4 cups of flour kneading until smooth, place in a greased bowl and let rise another 90 minutes. (once I grease the bowl, I rotate the dough to ensure is has been greased all around, then cover the bowl again with plastic wrap)
3. Punch down & let rest a few minutes then divide into 3 and shape into loaves.
Bake at 350 for 35 - 40 minutes ( I do mine on convection 325 degrees for 20 -25 minutes)
Best of luck

Egg Roll Filing
by lecale
- I make what dh calls "egg roll stuffing" with coleslaw mix, bean sprouts, shredded carrot, thin slices of green pepper, green onions, oyster sauce (asian ketchup, it does not taste like oysters, just salty/savoury/sweet) I use a whole bag of coleslaw mix and bean sprouts each and get 8-10 cups out of it...so, uh, don't use whole bags lol
For a meaty version I would just use ground chicken or pork with that
Sometimes I will make the roast pork that you get at the buffet that is red on the outside: just marinade pork in soy sauce, sugar, touch of 5 spice powder (1/4 tsp or less) and touch of red colour (optional) and roast then slice

Spring Rolls - by SimplifiedMommyTips
- I have different way of making spring rolls, for the meaty ones, 1 lb of ground pork or chicken, 1/2 cup of sweet chili sauce ( you can buy it from chinese or asian store) minced 1 carrot, sometimes when I get lazy I just grate it , minced ginger, season it with salt and pepper then deep fry.
Another recipe that I used from asian/chinese store a lumpia shanghia mix ( filipino mix), ground pork, minced carrot, minced garlic then deep fry.
edit:
veggie version:
minced garlic, chopped onions, julienne carrots, cabbage, green beans, ground pork, salt and pepper or a little bit of soya sauce just saute a bit veggies must be a bit crunchy, not soggy.
another veggie version; same ingredients above just add steamed bean noodles and you have the stuffing for your spring roll.
sauce: we make back home and even here is white vinegar ( only vinegar we have available back home that we can afford but you can use apple cider vinegar ) little bit of soya sauce and crushed garlic, the garlic opens up your appetite even more.

Celebration Chicken

1 package of Dry Onion Soup
1/2 cup of Ketchup
1/4 cup of brown sugar
1/2 cup of water
mix all together and roll your chicken around to get them all saucy and I also add small chunks of patatoes (not in the recipe) however the patoes get all saucy......yummy.
Bake at 375 for 50 minutes or until chicken is cooked through.

Perogie
by Caseythegoalie
The infamous super-secret perogie recipe from three generations of Ukranians: (super easy)
4 Cups of flour
1 tsp salt
-----------sift together---------
Make a "hole" in the middle of the powder.
Add:
1 Cup warm water
1 Cup warm milk
1 egg yolk
1/4 cup oil
mix all together. Add flour as desired.
When filled, drop in a pot of boiling water (add a bit of oil). When they rise to the top, they are done! (usually 45-60 seconds or so)
Then you just fry them up in a pan when you want to eat them.

Peel and cut about 8 apples. Add to slow cooker with 1/2 cup of water and 1/2 sugar (I use honey, it's better for you and so tasty!) and some cinnamon and nutmeg. Cook for 10ish hours. Stir. Eat.
I'll often set it going before bed and wake up to a yummy smelling house. Then we add it to oatmeal in the morning. So, so yummy

- Doughboys aka Dumplings
1 cup flour
2 teaspoons baking powder
1/2 teaspoon of salt
--------------------
1/2 cup milk
2 tablespoons oil
Mix dry ingredients in a bowl. Combine milk and oil together; add all at once to dry ingredients, stirring until just moistened.
Drop from tablespoon atop bubbling stew. Cover tightly; let mixture return to boiling. Reduce heatDO NOT LIFT LID simmer 12 to 15 minutes.
I always double the recipe because they are not enough to suit us. Make sure you have enough liquid as they will absorb some of your gravy and I drop larger spoonfuls of dough to make them bigger. I usually cook for the 14 minutes. I like them cut with butter and gravy on them. You can also reheat in the microwave but they are much better the first time around.

Pizza Dough
by dreamcatcher1962
1 pkg (2 1/4 tsp) dry active yeast
1 cup warm water
2 1/2 cups flour * I ususally only use 2 1/4 cups and if needed, will use the other 1/4 cup to roll the dough out.
2 Tbsp Vegetable Oil
1 tsp sugar
1 tsp salt.
Mix the water, sugar, & yeast together.
Let sit for about 10 minutes until the yeast goes foamy.
Then add in the salt, oil & flour.
Knead it until it is elastic. Then give your bowl a very light coating of oil and swirl the ball of dough around in it to coat the surface of the dough with the oil. Cover it with saran wrap (the top of the bowl) and let sit for about 15 minutes.
Divide the dough in half and roll out to fit your pizza baking tray.

Pineapple Angel Food cake

- 1 can diced pineapple (with juice)
1 box Angle Food Cake
Mix the above ingredients (only the two ingredients above do not add additional ingredients listed on cake mix box) and just mix by hand do not use a mixer. Pour into a 9 x 13 baking dish and cook at 350 degrees for 30 minutes. The pineapple reacts to the cake mix and makes a light fluffy cake.

- The Soda bread is a rather heavy white bread that uses baking soda instead of yeast.
It does not rise like traditional white bread but is more flat.
If you are interested in trying it here's the recipe. This one's pretty easy too.
Irish Soda Bread
3 Cups All Purpose Flour
1/2 tsp salt
1 1/2 tsp Baking soda
1 tsp Cream of Tartar
2 Tbsp White Sugar
Sift all dry ingredients together. Mix and lift between fingers about 15 times to allow air to mix in.
Next
1 3/4 cups Buttermilk or I use 7 Tbsp Buttermilk Powder with enough water to make 1 3/4 cups of Buttermilk.
Add that to your dry ingredients to make a soft dough. Do Not Knead.
Roll into a ball* Correction, Dump dough onto a well floured surface sprinkle more flour on top of the dough and rotate it until all area's are covered with flour. ( the dough is sticky and you want to be able to cut it and move it onto your griddle.- I use a pizza cutter) Don't mix in the extra flour you just want to coat it so that you can work with it.
flatten with your hands until it is approx 1/2 inch thick.
There are 2 methods of cooking. I use the one below.
I usually use some extra flour if it is too wet, to make sure it doesn't stick to my rolling pin.
I roll it out to about 1/2 in thickness and then cut it into triangle.(shape doesn't really matter, whatever works for you)
*At this point, I use an electric griddle at medium heat (350 ?) and cook it on each side about 6 minutes.
It will puff up when cooking.
Then put it on a cookie cooling rack wrapped in a clean dish towel. This is important as it helps to keep some of the moisture in it to prevent the crust from going hard.
When ready to eat, slice it through the middle like you would and english muffin.
You can toast it or just eat it as is with whatever topping you like.
* The second way to cook it is by baking it in the oven.
If you want to do it this way, do not roll it out with the rolling pin.
Once you have the round ball of dough, take a cookie sheet and lightly flour it.
Dump the ball of dough onto the cookie sheet, flour the top of it lightly and press it down to flatten it somewhat with your hands. Cut and X into the center of it right across the top of the dough (not all the way through)
Bake at 350 until a toothpick comes out clean , approx 25-30 minutes.
Once done, again I would wrap it in a clean dish towel , place on a cooling rack and allow to cool.
This can be frozen, just make sure you put it in a freezer bag.

We use the "flower bud" shape that I was taught when I was little.
http://www.youtube.com/watch?v=_wUiwMOa-BI
I tried to insert the link, but it didn't work for some reason. This video is just about the folding, depending on the age of your little ones.
I use a package of shrimp (or 200 g or so), de-veined and quartered for the little ones or cut into eighths if you're using large tiger shrimp
1 bunch of green onion (washed and diced)
1 - 1.5 lb lean ground pork
1 egg (optional, Dad always puts it in)
white ground pepper to taste (I've been leaving it out for the past few years)
salt to taste (I've been leaving it out for low-sodium diets - the broth has enough sodium)
1 additional egg to seal the wontons, beaten
1 package of wonton wrappers (thin squares, likely found in the soy milk or tofu section of your local grocery store)
Mix all ingredients and spoon into individual wonton wrappers. Make wontons as per video, sealing the edges with your finger dipped in the egg. Freeze. Boil when ready to eat. That's it!

- 7up biscuits
2 cups self rising flour
1/4 cup butter (I use olive oil)
1/2 cup sour cream (I used yogurt--it was vanilla that needed to be used)
1/2 cup sprite/7 up/lemon flavored soda
(To this I added 1/4 up grated cheese and put a little on top like the biscuits at Red Lobster)
The biscuits are a little on the wet side--I plopped the dough in a 8" square baking dish and smoothed it out a bit--then just cut squares to eat.
Bake at 400 for 20 min. or until brown on the edges

Banana Chocolate Chip Bread
2 ripe bananas (mashed)
1 box yellow cake mix
1 package banana cream pudding and pie filling
1/2 cup water
1/2 cup oil
4 eggs
1 cup semi-sweet miniature chocolate chips
Pre-heat oven to 350 degrees*
grease 2 loaf pans (bottom and sides)
1. Mash the 2 ripe bananas with a fork
2. Mix all ingredients (including the mashed bananas) except for the chocolate chips
3. Stir in chocolate chips (the directions say to pour the batter into the greased pans before you stir in the chocolate chips, but I find it's easier just to mix them in the bowl with the batter. If you pour the batter in the pans first, just add 1/2 cup chips to each pan and stir)
4. Pour into 2 greased loaf pans
5. Bake at 350 degrees for 40 to 45 minutes (If you are using a dark pan you may want to cut the heat back just a smudge.)

Awesome Banana Muffins
2 cups bananas
2/3 cups oil
1 cup sugar
2 eggs
2 cups flour
2 ½ tsp baking soda
1 tsp salt
1 tsp cinnamon
2 cups chocolate chips
Combine all ingredients Place in muffin pans
Bake at 350 degrees for 20 minutes
Banana Bread
½ cup butter or margarine
2 eggs
2 cups white flour
1 cup white sugar
3 mashed bananas
1 tsp baking soda
Combine and bake at 350° for 1 hour (I Find with a convection oven we tend to turn it on to 375)The oatmeal bars is a new recipe to me, but they are SO good. Taste like soft cookies. FYI: though dough is very firm, but do not be alarmed. Though I am definitely a chocolate fan, I reduced the chocolate chips in these recipes (as indicated below).
Oatmeal Chocolate Chip Bars
Ingredients:
1 cup unsalted butter, at room temperature
1 1/4 cups brown sugar
3/4 cup white sugar
2 eggs
1 tsp vanilla
2 cups flour
2 tsp baking powder
1/2 tsp salt
2 cups quick-cooking or old fashioned oats
1 1/2 cups chocolate chips (I only used 1 cup, and that was plenty)
Directions:
Preheat the oven to 375. In a mixing bowl, cream together the butter, sugars, eggs and vanilla. In a separate bowl, combine the flour, baking powder and salt. Gradually add the flour mixture to the mixing bowl and beat just until combined. Fold in the oats and chocolate chips. Spread in a rimmed 10x15 baking pan, using a spatula or your hands to press into place. Bake for 20 minutes, or until golden brown. Cool, but cut the bars while they are still somewhat warm, as a knife will go through them more easily.
*Note: I halved this recipe and baked it in a square 9x9 pan and it turned out perfectly. I think you could do a 9x13 pan with the full recipe, they will just be very thick (which isn't a bad thing!) and you will have to increase the baking time. I haven't tried these in the 10x15 pan so I can't say for sure how thick they turn out.
Fudgey Brownies
1 1/3 cups flour
1 teaspoon baking powder
1 teaspoon salt
1 cup butter
1 cup cocoa
2 cups sugar
4 eggs
1 ½ teaspoons vanilla
1 cup chopped nuts (optional)
1. Stir together flour, baking powder, and salt in small bowl. Melt butter in a large saucepan. Remove from heat. Stir in cocoa. Blend in eggs, sugar, and vanilla. Blend in dry ingredients and nuts (optional). Pour batter into greased 9x13-inch baking pan. Bake in pre-heated 350F oven 30 to 35 minutes or until done. Cool.
Banana Chocolate Chip Muffins
Ingredients
3 large bananas
3/4 cup granulated sugar
1 egg
1 tsp soda
1 tsp baking powder
1/2 tsp salt
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/3 cup melted butter or unsweetened applesauce (recipe calculated using applesauce)
Chocolate chips (to taste--1 cup calculated...I only used 1/2 cup)
Mash bananas
add sugar and egg
add melted butter
add dry ingredients
mix in chocolate chips
Bake for 18 - 20 minutes at 375
***The recipe said: to get 24 muffins, I do not fill the muffin tins. I usually fill them about 1/2 way or less.
I did a quadruple batch and ended up with 6 dozen nice sized muffins. blueeyetea DOTTIE'S BURGER SCRAMBLE FLORENTINE
2 pounds ground beef
1 1/2 ounces onion, chopped (about 1/2 a small onion - see my update below)
2 cloves garlic, minced (optional, not included in the counts)
10 ounce package frozen chopped spinach, thawed and well-drained
8 ounces cream cheese, softened and cubed
1/2 cup parmesan cheese (2 ounces)
1/2 cup heavy cream
1/2 teaspoon garlic powder (optional, not included in the counts)
1 1/2 teaspoons salt
1/2 teaspoon pepper
Spray a 2-quart casserole with non-stick spray. Brown the hamburger and onion (and fresh garlic, if using) in a large pot or Dutch oven; drain the fat. Stir in the spinach; mix until well combined; add the salt and pepper (and garlic powder, if using). Add the cubed cream cheese and stir until blended, mashing it into the meat to blend well. Stir in the parmesan and cream; mix well. Pour into a casserole dish. Bake, uncovered, at 350º 30-35 minutes, until bubbly and browned.

The second recipe I tried was Roasted Fennel (from Martha Steward site) because fennels were on sale at Farm Boy:
2 fennel bulks
1 tbsp olive oil
Salt and pepper
- preheat oven to 425 F
- toss fennel with olive oil, salt and pepper.
- spread in one layer on a rimmed baking sheet. Roast turning once, for 25 to 30 minutes.

Recipes for household cleaners (detergent, cleaners, etc)
Liquid Laundry Detergent
by matty's Mom
- 3 tbsp of borax
3 tbsp of washing soda
2 tbsp of Blue Dawn
6 boiling cups of water
put into a container & shake until all is dissolved. I use a 4+L old purex container and double up the recipe. I add ~2 cupfuls to my dispenser.
Some versions of this call for 4c of water, but I find that I get crystals on the bottom of the jug if I use less. I use this in my HE washer and I am generally quite happy. It isn't great on bad grease spots, so I just apply a diluted dawn spray on them. Is it as good as store bought? Honestly, it isn't tide. But it is SOOOO cheap to make. It cost me $13.00 for everything and I still have half of the borax, and washing soda left over. The dawn- well I use that for other things, so I always have that in the house. It is as good as gain, purex etc.

- citrus vinegar. I use leftover orange rinds and soak them in vinegar for 2 weeks. Strain. Then to clean, I dilute it in half with water and put it in a spray bottle. I was pleasantly surprised at how well it worked.
I use it undiluted as a rinse agent in my dishwasher. Although I've heard that can ruin the compartment-so I'm not sure about that.

No-grate Liquid Laundry Detergent
3 TBS Borax,
2 TBS super washing soda,
2 Tbs Blue Dawn dish detergent.
Put into gallon jug. Pour in 4 cups boiling water and swirl until powders are dissolved. Let liquid cool, then fill almost to top with cold water. Bubbles will foam out a bit. This is thin, but Dawn does get the grease out. Use ½ to 1 cup per load.

Homemade Stain Remover (Shout)
1. 2/3 cups Dawn Dishwashing Liquid
2. 2/3 cups ammonia
3. 6 Tblsp baking soda
4. 2 cups warm water
Mix everything together and pour into a spray bottle, OR, use an empty dish detergent squeeze bottle, as sometimes the spray bottles will clog up.
Before you go to use it…if it’s been sitting for awhile…give it a good shake.
To use: spray on stains as you normally would. Maybe let it “soak in” for a few minutes at least. Then launder as usual. If you leave on more than 20 hrs it may cause fading; so don’t let sit. Otherwise it is safe to use on colored clothes.

Just started the bread. That'll give me 6ish loaves in the freezer, so I won't have to worry about making some for a couple of weeks. A friend bought me this amazing bread knife. It's like slicing butter. It's made my life so much easier. And pita bread is rising.
Couldn't find any fresh white fish yesterday (and I am far too inexperienced to actually go fish some myself), so I'm going to make lasagna tonight and make the white fish next weekend.
I made waffles this morning. I've started quadrupling the batch (you should see my poor mixer, it can't handle anymore than that) and freezing them. Then the kids just toast them for breakfast like you would an eggo. I can't decide if it's cheaper than eggos (especially since there are usually coupons out there for them) but they are FAR more filling and healthier.

Hi folks! Happy Labour Day weekend! It's SO hard to believe the kids will be heading back to school on Tuesday. First time in 59 years that I won't have to be "listening for the bell". In fact, I'm going to a "To Hell With The Bell" retired teachers breakfast on Tuesday.
Today, dh is making some of his famous devilled eggs (got eggs on sale at SDM) and I'm going to a PotLuck supper with my db and some friends from our church.
Yikes, I was SO tired yesterday that I didn't even run out to use up some expiring coups. Then we went to Detroit for a baseball game. Treat for my db. We sat in the handicapped section so he wouldn't have to deal with stairs. (He has CP.) He was thrilled and there were fireworks afterwords. But we didn't get home until after 1:00am. (Detroit beat Cleveland btw)
I'm still purging. My aim is to get rid of one of the dressers in our second bedroom and give it a more "open" feel. Was taking pictures out of frames today so i can store them in a more space-saving way. Someone suggested to me to take pictures of "memories" and store them on a memory stick. These are my mil's pictures, though, so, for now we're keeping them.
One more drawer and it's all stationary stuff and pens, etc. so that can be "re-purposed" in someone else's drawer - they're going to St. Vincent De Paul. They give a tax receipt which other second-hand places do not.
Enjoy the rest of your weekend!

Another SC mentioned Walmart's Anniversary Sale. Some like this sale. Some don't find much. The best part of Walmart's Anniversary sale is that other stores try to get you to come and spend your money with them. They always have some kind of deal around mid-late September.

Just dropping by to wish everyone a happy labour day. Hope everyone is enjoying the last long weekend of summer.
The last two weeks of August, I set up a goal for the boys, eldest son to start reading and the youngest son to be able to write his alphabets and numbers before school and we both met the goal. Im very happy, just need lots of patience.
My goal for this month is to stay on budget, I will be off work till the end of the year (hopefully if my medical leave gets approve) and my mat leave pay is about to finish this month. So we will be definitely living very frugal, frugal as it is will be even more tight.
Will try to keep up with you ladies.

Hi folks!
Last month a experiemented with hanging lots of cloths to dry instead of putting them in the dryer! I am very pleased!
I also bought a used electric tire gauge to ensure my tires have proper hair, to make sure I am not wasting gas.
And I'm going to stop my obsessive vacuuming. Sometimes I do this twice a day.
Thanks for this thread, i am going to go look for other ways to be a bit more efficient and wiser with my resources.
