What's For Dinner?

Roast pork loin, roast potatoes and Asian salad from the school chef.

What a smell in here!! ( a good smell )
Started up a few things for the weeks meals. I roasted a NF pork rib roast, boneless. ( it was 30% off so I could not leave it there! ) Removed the roast and added just a few of those " white death " potatoes to cook and crisp up. Made a yummo quinoa mixture adding diced sauteed onions, red pepper and grilled chix breast pieces, and thickened it making a sauce with just 0% fat Greek Yogurt and water.
Did more of the stuffed chix breasts with that stove top dressing inside ( for the kids ), the usual suspects for veg....beets, butternut squash, and I am hoping the guys will put together and toss their own salads up, because this afternoon I am juicing.

Leftover chicken and potatoes from yesterday (puh-lease, could my husband get his appetite back? - he only had like three pieces of chicken!), will make a salad to go with.

suppose to be a very lovely day here...so bbq for supper..think I will grill some chops and make my mango salsa that I love so much (goes so good with pork). I have my patio furniture all set-up so dinner on the deck; maybe a glass of wine..hello weekend!

I just found a recipe for steamed, pork stuffed Dim sum buns so I might try that as we have leftover cooked pork.

Cream of Tomato Soup and Toasted Fried egg sands. with sliced cucumbers and mayo. Weird sounding but really yummy and quick
