    Not sure exactly what will be for dinner tonight. I really want to BBQ again so maybe mini pizzas on the naan rounds?????? Oh ya...... Creme brûlée for dessert with fresh berries

    It's a beautiful day here, I should be bbqing, but I'm too tired! We hiked for three hours earlier, a great time but we're wiped. So chicken breasts are in the oven.

    I nearly always buy chicken thighs at Costco as our main source of protein. For tonight i had breasts that were on sale at Superstore. I asked DS which he liked better - he agrees with me, the thighs are juicier and tastier (and cost less!).

    Homemade perogies I took from the freezer...boiled up and fried with onions and sausages. Made 2 apple/peach pies with frozen pie crust and put a crumb topping on it....just had a piece and it is good I must say :0p

    We ended up having BBQ potatoes,chicken breast, pork tenderloin and super 7 salad and this was our dessert

    OH, I've had the oven on for hours, too!

    Roast chicken ( a biggie!) with dressing, gravy, rice with sauteed onions and celery, cooked carrots, and corn off the cob.

    my grandmother made cold plates yesterday so I have a couple in the fridge for later--they include 3 different potato salads, macaroni salad, roast beef, baked chicken, ham, some other veggies, tomato & lettuce and homemade dinner rolls

    last night I thought I'd try doing that soak the bread method for the first time ( instead of adding breadcrumbs ) to stretch the lean ground beef for the burgers, but I guess I added too much, they were kind of falling apart in the pan.......now the kids scooped up the meat and the bits and slapped them into a bun np! AND they said they were tasty too!
    but DH??! Well, his pout told me I had ruined his burger, so while he stepped out to the store I dragged another pack of beef out of the freezer for his Highness. I added NO filler, just onion/salt/garlic/parsley to it, when he returned and ate, his frown had turned upside down. lol!!
    I ate a fall apart one, phhfft! nothing at all wrong with the flavour and texture.

    Last night was our first BBQ on our new BBQ, we have gone 3 summers without a BBQ and I forgot how much I love BBQ food. We had Steak with Roasted potatoes, asparagus, eggplant, zucchini, portabello mushrooms and peppers oh it was so good.

    Also someone asked me for a recipe from this thread (so sorry cannot remember who) but it was for the quinoa eggplant parm casserole here is the recipe I used http://www.theironyou.com/2013/09/eg...casserole.html
