I ended up doing a baked potato with the chili on top

Tonight will be BBQ burgers and a salad of some sort.

I also need to figure out what to do with the 10lbs of ground beef I have

Smoked picnic shoulder was on sale at Superstore this week, and I LOVE ham, so picked one up. I soaked it about seven hours during the day after cutting much of the fat off, trying to soak out some of the salt. Then I put it into my pressure cooker. It took much longer than I thought it would, but after putting it in longer, it was very tender (although more salty than I wanted, would soak it more next time). I put a maple/mustard glaze on it after it was done and put it under the broiler to brown.

seems I was in a cooking mood today! Made a killer borscht at 7:30 a.m. then just made the most tender deep fried chicken breast pieces ever!
( they are a tad smaller than a chicken ball ) I pan sauteed the pieces first so they would be mostly cooked before battering them up. This time I seasoned all the pieces first with my homemade citrus powder ( made from grinding dehydrated lemon/orange peel ) and when I made the batter I used Bud Light Apple beer as the liquid, beaten egg, cornstarch base, some baking powder, and a handful of coconut flour.
agh!!! I cannot stop eating them!!

We had a deli style dinner... potato salad, mac & cheese salad, shaved roast beef & turkey and a caesar salad.

I didn't have breakfast or lunch, but for supper had a schnitzel and a smokie. Husband had ribs.

Hours later, realize that I shouldn't have eaten anything except maybe soda crackers.... must just be a tummy bug.

Last night's supper was home made cheese buns and leftovers. I later had a big salad with a glass of milk.

Today I am roasting a picnic ham. Will probably have it with pineapple, milk, and some other stuff.

I'm going to BBQ tonight. I'm not very good @ it, but …
Salmon steak, baked potato, and some veggies - peppers, carrots, onions.
    Looking forward to it.
