    2 tablespoons olive oil
    5 cloves garlic, minced
8 cups thinly sliced yellow onions (about 2 large onions)
    Salt
1 tablespoon fresh thyme leaves, chopped
    1/4 cup sherry
    1 1/2 cups Guinness Draught
    6 cups beef stock
    1 bay leaf
Country bread loaf, cut into six 1/2-inch thick slices, then toasted
1/2 lb Irish Cheddar, thinly sliced
Heat the olive oil in a 6 quart Dutch oven over high heat. Stir in the garlic and cook until just fragrant. Add the onions, season with salt and cook for about 5 minutes, stirring often. Reduce the heat to medium-low and saute the onions for another 15 to 20 minutes, stirring occasionally until they are a deep amber color.
Add the thyme, sherry and beer. Cook until the liquid is reduced by half, then add the beef stock and bay leaf. Bring to a simmer and continue to cook for 20 more minutes.
Meanwhile, preheat the broiler and set out individual oven-proof soup bowls. Discard the bay leaf, then use a ladle to transfer the soup to the individual bowls. Top with toasted bread slices, then 3-4 slices of the cheddar cheese. Broil until the cheese is bubbly and slightly browned. Serve piping hot.

Ohhhh, comfort food! I'd always order it up to the room when we stay at the Chelsea Hotel in Toronto...an absolutely lovely end to the day! I've made it only once...strange, eh? To love something so simple, but never make it...I'm guessing it's because of the copious amount of cheese and that hunk of bread...unfortunately!

How nice that you can share lunch with your Hubby sort-of off the beaten track. We've only had to be there once for DH's cancer check-up (no biggie now, thank God) and it's a busy place, alright! Quite beautiful, though, for a hospital...however I sure can understand wanting some quiet time alone with your Hubby.
Sorry you had a tough day, however...

Once when I stayed at the Chelsea hotel I got a little surprise. I got back from the play warhorse and there was a plate of nachos and some bottled water. It had a note from the marketing manager that said he had a nice talk with me on Facebook and this was with his compliments.

Sometimes it's those small gestures that make the biggest impressions.

I know I don't look like the kinda guy to do this but. On that weekend it was a whole thing for me. The play, a haircut with massage and a manicure. Plus couple nice meals. Of course it was just more reason for my cousin to call me princess lol.

    Good for YOU, Cabmonk, Dear!!
Nothing worse than seeing a guy with yucky nails....or should I say "unkempt"...since I know honest work can make a guy's hands grubby, but that's no excuse for keeping them that way...yuck!!!

Sounds like you had a lovely time, Cabbie!!!

Was a little while ago but I like doing things like that. I went to a place called mankind grooming which is for men. I ordered haircut and manicure months in advance for a specific date. I get there and she starts the haircut (which alone is $55) and part way says oh by the way did anyone tell you Fridays is our manicurests day off. Well why would they let me book for that date lol. Anyway I got manicure at elm wood spa on the sat morning.

    http://www.mankindgrooming.com/#!services/cihc

I had requested the bundle which is like $90..anyway the haircut alone was probably best haircut I ever had. Friends and family in timmins were like wow expensive but well spent because it looks great.
