    Last night was Homemade Meatloaf with Homemade Mac & Cheese

    Think tonight will be fend for yourself/leftovers as my fridge is full of leftovers and there is too much for just lunches.

    ....running out of room in my freezer so took out the leftover turkey I froze from Christmas, made a turkey pot pie and made a stock from the carcass and bones ,etc..planning on making turkey soup tomorrow, however, invited a few friends over for a dinner party tomorrow so Plan B, not sure what I'll make (not soup)...(also a good time to unload the leftover Christmas cookies and cake, etc in the freezer tomorrow ) (short list, 3 different kind of macaroons, brownies, peanut butter balls, coconut balls, rocky road squares, queen anne bars, nanaimo bars )

    last night I made " somefin ".
    spread pastry dough out over a large cookie sheet, pricked it all over and half baked it.
    Spread 2/3 of a can of cheddar cheese soup over it, then sprinkled diced bell peppers, tomatoes, green onions, peaches & cream corn niblets, extra large whole ( cooked ) tiger shrimps and buried it all under a layer of extra old grated cheddar cheese.

    Returned it to the oven to let everyone get acquainted ( melt and meld ) and then gave it a few more seconds under the broiler. It was very tasty! Sort of like a pie? The guys had some when they got in from work and liked it.

    ....keepin' it simple and ordering out so I can relax and enjoy the company...will probably make a salad and one of my friends LOVES my macaroni & cheese (its all cheesy & crusty on the outside and gooey & cheesy on the inside) so might make that as well....HAPPY FRIDAY!!! enjoy peeps!!
