I made a nice cake this morning using some leftover sour cream and some plain yogourt. Recipe will follow.

I roasted just over a pound of peppers, and 2 large heads of cauliflower. I adore roasted veggies (well most).

Flatbread pizzas with pitas for the bases this time, sauce made from passata and seasonings, and topped with plenty of pepperoni, salami and mozzarella. Pitas produce a thin crispy crust, and a package of five makes a meal for the two of us. Without any advance mise en place, they were ready in about 30 to 35 minutes from when I turned on the oven.

Ok, here is the recipe for this cake. It is my friend Brenda's cake recipe which she gave to me about 40 years ago (lol, yes that long ago) and i still use and it is one of my granddaughters favorite cakes to make.
BRENDA'S CHOCOLATE CHIP CAKE
1 CUP MARGARINE OR BUTTER
1 CUP WHITE SUGAR
2 EGGS
1 CUP PLAIN YOGURT*
1 TSP VANILLA EXTRACE
2 CUPS FLOUR
1 TSP BAKING POWDER
1 TSP BAKING SODA
1/4 TSP SALT (PINCH)
3/4 CUPS CHOCOLATE CHIPS (MORE IF YOU WANT THE CAKE MORE CHOCOLATEY)
PREHEAT OVEN AT 350f.
CREAM MARGARINE OR BUTTER AND SUGER. aDD EGGS, YOGURT, VANILLA AND BEAT WELL. ADD FLOUR, BAKING POWDER, BAKING SODA, SALT AND MIX WELL UNTIL BLENDED. FOLD IN THE CHOCOLATE CHIPS.
POUR BATTER INTO LIGHTLY GREASED 12 CUP BUNDT PAN (OR YOU CAN USE A 9 X 13 INCH BAKING PAN). BAKE AT 350f FOR 45 MINUTES OR UNTIL DONE (DIFFERENT OVENS BAKE AT DIFFERENT TIMES SO CHECK). CHILL FOR 15 MINUTES AND REMOVE FROM PAN. ENJOY!!!!!
*I HAD ABOUT 3 TBSPS OF LEFT OVER SOUR CREAM THAT I PUT INTO THIS CAKE AND A BIT MORE THAN 1 CUP OF PLAIN YOGURT THAT I ALSO USED. THE CAKE CAME OUT GREAT EVEN WITH THE ADDED AMOUNTS.Last edited by SnowFlakey; Sun, Sep 27th, 2020 at 09:41 AM.

Meet your new favorite apple cake! This country apple cake (a.k.a. Sharlotka) is soft, moist and unbelievably easy with just 6 ingredients - perfect for last minute company!

Ingredients
- 6 large eggs room temperature
- 1 cup granulated sugar
- 1 1/3 cups all-purpose flour
- 1/2 tsp baking powder
- 1 tsp vanilla extract
- 1 1/2 lbs 3 med/large granny smith apples
- 1 tsp Confectioners (powdered) sugar to dust, optional
US Customary - Metric
Instructions- Preheat Oven to 350˚F. Line bottom of un-greased 9" round springform pan with a circle of parchment paper
- Add 6 eggs to the bowl of a stand mixer fitted with whisk attachment, and beat on high speed for 1 minute until foamy. With the mixer on, gradually add 1 cup sugar and beating on high for 8 to 10 minutes or until thick and fluffy ribbon forms.*
- Meanwhile, peel, core, quarter and slice apples into 1/4" thick pieces.
- In a medium bowl, whisk together 1 1/3 cups flour with 1/2 tsp baking powder. Sift flour mixture into the beaten egg batter in 3 increments, folding with a spatula between each addition. Scrape from bottom of bowl to ensure pockets of flour aren't missed. Stop mixing when you no longer see streaks of flour (don't over-mix). Quickly fold in 1 tsp vanilla extract just until incorporated.
- Fold in sliced apples, reserving 1 cup for the top. Fold just until combined into batter then pour batter into prepared springform pan. Spread batter evenly with a spatula (do not tap the pan) and scatter remaining apple evenly over the top. Bake at 350˚F for 50-55 minutes. Top will be golden brown. Remove from oven and let rest in pan 15 min. Slide a thin spatula or knife around edges of pan to loosen and transfer cake to a cake platter to cool. Once at room temperature, sprinkle top with powdered sugar and serve.
Recipe Notes*When you pull up on the whisk, the ribbon of batter should sit for a few seconds on the surface before incorporating back into the batter.
Pro Tip: As with any egg-based cake, be sure you beat the eggs and sugar sufficiently. If using a high powered electric hand mixer, add 2 min to beating time in step 2. Keep cake away from outdoor draft to prevent an "eggy" aroma.

maybe out of topic but anyone know where I can purchase bundt mould...tried dollorama and they have only betty crocker baking pan and springform mould....thank for the response

@cath007 - Amazon.ca and maybe Walmart? You're in Montreal? I've bought bakeware from The Bay (downtown store) and Michaels (LaSalle location). Canadian Tire has them - and they will be having a sale on some bakeware - should be in the new flyer this week.

You can try Bulk Barn if you have one near you. I know there are several in my area: Dix/30, St Jean Sur Richelieu, Granby. Try there. Or you can get a nice 12 cup bundt pan at one of the specialty kitchen stores, like Ares. But they are very expensive there.
Also you can try Wish.com. but be prepared to wait for delivery.
