I have never baked with corn meal. My MIL used to make a fantastic Maliga (spelling). She was Romanian. And the only other time i had corn meal was an undercoating for pizza. Are Corn Muffins easy to make.

They are just like making bran muffins. They arent sweet we had them in lieu of bread. Heres the recipe I used from Muffin Mania.

My normal routine when measuring any dry ingredient that calls for 3/4 cup is to pull out my 1/2 and 1/4 cup measures and voila! Not today apparently.
I never knew what had happened until I checked the cookies on the tray after just 8 minutes in the oven and the parchment paper was totally filled to every edge, every cookie had flattened and sidled next to his co-cookie.
Clearly they never got the social distancing memo.

I decided NOT to waste them. I left the tray in and cooked until they were crisp.
Before they totally cooled I used a pizza cutter to make the rectangle shapes....drizzled them all with honey and added the chopped walnuts.
    They are delicious!!
Anybody figure out what I did wrong?
I used a full cup and a 1/2 cup measure when I put the sugar in the bowl! ( instead of the 1/2 and 1/4 ) The evidence was right there on the sink counter....

By the way on his recipe it claims that the yield for this recipe is just 8 cookies? That MUST be a typo because even though I did add twice the sugar I managed to scoop out 3 cookies across by 6 down onto 2 cookie sheets ( before they all spread out flat once they baked ).
    My yield was 36 cookies
Also notice there is icing sugar in this recipe as well.
@walkonby - yes sounds like a typo. Although I did just look at the original recipe and the cookies look pretty thick. They look really good too - do you plan to try the recipe again with the correct measurements? I'd be curious to know what they're like. If anyone tries them, please post and let us know! For me, I would have to make a GF flour blend first and haven't found one I'm really happy with.

Here's the link to the recipe again and the pic of the cookies is at the top of the page!

Biscotti! I substituted what I had on hand instead of the actual recipe ingredients but it still worked out delicious.
Lets call these Sweet potato/whiskey cherry/walnut biscotti.
I predict these will not last long around here.

( explanation : had no canned pumpkin puree BUT had a single sweet potato!
had no molasses, used pure maple syrup
had no cranberries but opened this jar of whiskey cherries that we got for Christmas.
had to drain, rinse the black pepper off, pit and chop them.
