Decided on Chicken Enchiladas, I cannot find Enchilada sauce in my area so I make my own. They will have Chicken, Mushrooms, Peppers & Cheddar in them.

trying to decide between homemade pizza or a bbq but I have fresh dough in the fridge so will probably need to make pizza and save the bbq for tomorrow or the next day

I'd like to build some fish tacos today. never made them before but I have Basa steaks already cooked up, a half bag of coleslaw left in the crisper. I have cheese, sour cream.... Guess I'll Google what else goes into a fish taco.

Saturday, my daughter gave us 6 Beefsteak Tomatoes, 5 English Cucumbers and 3 Iceburg Lettuce! so tonight for dinner im making a chicken salad with some of the stuff she gave us along with some hard-boiled eggs and cut up fresh fruit on the side (purple grapes, watermelon, honey dew melon, kiwi, banana, mango and orange slices.). Its too hot to make anything in the oven.

Last night i bought a silverstirling rib eye brand steak at sobeys (cost $15)(i did get 25 airmiles for buying it ) i splurged -we had it medium well with baked potatoes & corn on cob .
It truly was a restaurant type steak ,such an enjoyable meal .
Finished the evening off with a magnum cherry ice cream bar -so yummy .I paid 3.10 for a box of 3 after cpns points and sale .

The first bbq was sooo good yesterday!! another "nice" day ahead so planning on bbqing homemade burgers, not sure yet on the sides, maybe a salad and a few fries in the air fryer

We did a very odd thing last night. I had a large freezer ziploc bag filled with nice chunks of pork butt pieces that I was saving for when we try to make homemade sausages for the first time. ( new machine, anxious to try all the attachments ) .
However, once DS had made a double batch of his flat bread, how could I not break off part of that meat to marinate and slide onto skewers?
" Break off " made it sound simple...it was anything but! DS did all the muscle work, he used a rubber mallet and a screwdriver! lol!!! There are only 3 remaining now out of the 7 I cooked up....sigh. So yummy!

I made taco meat for the boys Tuesday night. So they had tacos yesterday. I made taco salad for my dinner.
Tonight- I need to give the fridge a quick clean out and see what needs to be used up. I may take a container of stuffed pasta out for the freeze and whip up something amazing for DS.
We will wait to eat when the hockey game starts. Prob a burger and homemade fries in the air fryer- it feels like one of those kind of nights!

Tonight I am going to try a new recipe in the Slow Cooker, it is a Slow Cooker kind of day, I need simple and easy. So I will put Mongolian Beef in the Slow Cooker, I have rice I made the other night to serve it over and will make some broccoli so stir fry mix on the side.

It is a bit warm out today so going to keep it simple, do not want to turn on the oven. We are having BBQ Chicken Sandwiches with some Chips on the side. Normally I would have some veggies to snack on too but had those with lunch so might make a Salad instead.

Totally cheated today, Mom got an email from our local pizza shop that our rewards will expire this week and when I checked we had a free large pizza with 5 toppings so you guessed. We got our free pizza which we split and ordered some sides (wedges, poppers, maple knots).

Yesterday I made pulled pork in the slow cooker and there's leftover bbq from the day before (chicken, coleslaw, beans & baked potato) so its going to be a clean out the fridge day!
