What's For Dinner?

I am making meat sauce today so will cook up some pasta.
We also have stuff in the fridge: tacos, meatballs and chicken breasts (told DS he can make chicken ceaser wraps)
What ever is still in there tomorrow will go in the freezer to take out over the next few weeks.

Breakfast for dinner tonight. Mexican tofu scramble wraps. Easy, protein packed, filling and great for working out today and hopefully my run tonight (fingers crossed the rain holds off until then)

Pulled a frozen Meatloaf from the Freezer, will make Mashed Potatoes, Green Beans and a side Salad to go with it.

Had a late breakfast ( again ), might as well call it brunch. It was big too.
So had no hunger until about 7:30 tonight.
Mmmm, haven't had sk/bn chx breast in anything for a while, so this Lavash pita was filled with pan seared chx, red peppers, mushrooms and green onions. I really wanted a sauce, then remembered I had Greek yogurt, cucumbers and fresh garlic on hand.
Tzatziki ! I also chopped up fresh dill and cilantro into it.

Tonights after run dinner was roasted broccoli, sweet potato and sliced garlic with bbq tofu.

We had take-out the other night for Mother's Day, living in a rural area delivery is limited so Mom grabbed what she wanted the other day after an appointment and I paid.

So tonight for Mother's Day dinner she choose Homemade Pizza. I will also make a side salad, cannot decide what kind yet, I have some veggies in the fridge I could make a nice garden salad but pizza and caesar salad is just so classic.

I roasted some sweet potatoes and sliced garlic in garam masala spices, more garlic and coriander then made individual naan bread pizzas topped with shredded kale and Daiya mozzarella cheese. Served with a mixed salad with Costco salad topper and hemp hearts and a vinaigrette style Caesar dressing. The inspiration came from @SassyAshley and then my parents were having pizza when we stopped by. I had not choice but to have pizza

@harbie I am obsessed with the vinaigrette style Caesar Dressing, such a nice change from the rich and creamy version.

Tonight's dinner became a bit of a last minute thing, we had no plan, no cravings. Last minute we decided on Burgers with Oven Fries and I am having a side salad with Romaine, Carrots, Cucumber, Peppers and Non-Creamy Caesar Salad Dressing (my new obsession, going to need to make more on the weekend).

It is days like this I love having things like Homemade Burgers in the freezer to just pulled out and cook.

Dinner was on repeat. Dh wanted the Indian sweet potato naan pizzas so I was all for a easy fast and yummy dinner.

Tonight Mom will have BBQ Chicken Wings, I will have BBQ Chicken Ceasar Wraps not sure about the side dish yet but more than likely keep it simple with Oven Fries.

Homemade Mac and cheese (in the oven now) I will have some for lunch.
It will be in fridge for heat and eat dinner (can make a salad with it) for whoever would like it.
We are on Summer time so golf and beach time. Eat when you can!
