    We got the Ninja one from Costco. I love it the only thing I will warn is on the single basket one the basket can be a little small depending on what you are cooking. The square ones are a bit easier to work with and give you more room.

    Light dinner today as I am not feeling 100% well
    Croissant with cold sliced turkey,lettuce,tomatoe slices,swiss cheese and some mayo quick and easy maybe a salad to go with it.

    @cath007 !!! I LOVE that square plate! I have a set of those for special meals when company is here, It makes it so much easier to fit in all the servings of many side dishes on the table. Your rolls look so packed! Probably loaded with fresh crisp veg and maybe shrimp?

    I used to loath tofu and I was terrified of what I’d eat for protein when I went vegetarian first ( made the change due to kidney stones) but I have found way to prepare it that I now LOVE it. I do a “salmon” that is sooooooo yummy. It’s all in the preparation and execution.     I've been away a bit on here, time stands still when you're trying to clean out a garage.

    My next concern was for calories and fat.
    This 1200 cal. reducing plan is still a thing here for me, but I won't mess with what is working right now.
    ( 47 pounds gone since Jan 20th ) .

    So I went on the MyFitnesspal site and punched in the numbers to see what that tofu feta cheese would " cost " me diet wise. Maybe I'm doing it wrong, but that full recipe yields about 9.7 servings maybe?
    I base that on what amount of real feta I use in things ( 35 grams only at a time, or 1.23 ounce ), so 12 oz. of firm Tofu divided by 1.23 comes out to 9.7 servings each.

    To my disappointment the Tofu Feta version would just cost me too much in my allowed fat and calories for the day. The tofu is NOT the problem, it's the coconut oil, like ALL oils they ruin everything on a diet ha ha !


    35 gr. light feta

    82 cal
    6 gr. fat
    8 gr. protein.

    1.23 ounces tofu feta

    163 calories
    16 gr. fat
    3 gr. protein
    Mind you the sodium in real feta is 350 mg. while the tofu is far healthier at just 4 mg.
    I could see why you add a bit more salt to the recipe.

    No worries, I'm still open to new ways to switch up the boredom while reducing!

    I make this soup all the time. Funny thing happened this time though. The recipe calls for 4 cups cauliflower but I usually make a double batch.
    Somehow I ended up with 16 cups of the raw veg, ( guessing those 2 heads of cauliflower were much larger than any I had used previously ) which meant I now had to do 4x for all the other ingredients.
    That large pot is my pressure cooker. I'm still waiting for the soup to get cooled down even more before I start the blender thing on it.

    Hoping to get a yield of 20 x 1 cup servings.

    I yielded 30 x 1 cup servings from that pot. I'll post a separate pic below this post, gets complicated to add a new pic in an old post.

    30 servings, but I always eat a 2 cup portion with my lunch or dinner, so this batch will disappear fast!

    @walkonby: yes shrimps. rice wrap ,.with noodles lettuce carrots cucumbers and red peppers I bought those at harvest market at a vietnamease(spelling sorry) kiosk .They are so fresh and not too expensive.A treat.Yes I have special plates for specials occasions too hahah!!!!

    Last night I made BLSL chicken breast in the air fryer and served it with salad. It was really good.

    Tonight- not sure yet. Thinking steak, asparagus (fresh) and salad

    Actually got to plan dinner tonight, this week has not been my best week, most nights it is 5 pm with no dinner plan.

    Tonight will be Mozzarella Chicken (OH MY GOSH, my new fav) with Pasta and a Salad

    Well we were rebuilding our pantry we found a jar of Butter Chicken Sauce, we do not buy it often as there is only one brand we can buy, Mom has a coconut allergy.

    After spending most of the day rebuilding the pantry, we needed easy so we Cooked up some Chicken Chunks (oh how I love having pre cut meat in the freezer) with Onions & Mushrooms in Butter Chicken sauce and served over some leftover rice we had in the fridge.

    DH enjoyed some of the single Turkey breast done in the Air Fryer and mini red spuds ( " smashed ", which is just baked, squashed down, buttered and baked some more ), while DS and I got back into these from lunch.
