    What better way to clear a big space in the freezer than to remove the 2 long trays of pork side ribs? Badda Bing Badda Boom! They were partially thawed in the microhooch first, just enough to slice them into hand holding sized pieces, pressure cooked for approx. 30 min, then laid on top of wire racks in my large roast pan. All the drippings fell as the ribs baked nice and dry at 400 degrees. My guys don't want nuthin on their ribs, as in no sloppy sauces. Whatever......simpler for me.
    Turned 4 cups of dry Basmati rice into killer fried rice adding a ton of small diced veg to it. Never underestimate the flavours fish sauce, sesame oil and soy sauce can contribute to a fried rice dish.

    While it appears we have a lot of pizza we had it 3 days ago so it’s not all the time .

    Last night I made cheese “burger” pizza. Used Not burger patties crumbled with onions, garlic and s&p. Used naan bread with a plant based Big Mac sauce , the not burger crumble, Daiya mozzarella and cheddar cheese and topped with sliced dill pickles. It was really good!

    There is no rest for the wicked and even those with 2 sore knees have to suck it up. This Sunday we are hosting our DD for her belated b'day ( dinner ).
    The headcount is just 7 people ( we're all family ) but we chose to keep it covid/safe, so still no friends allowed....sigh.

    The menu includes asmall batch of Braised Beef ribs, ( done ahead in the pressure cooker ) On the BBQ will be marinated skn/bnl chx breasts and spicy corn on the cob.
    We have 1 " no beef eater ", so I'm making a foil pouch of cod/herbs/lemon slices in the oven, also in the oven a pan of " smashed " potatoes.
    More oven work with an array of roasted veg ( sweet potato, butternut squash, bell peppers, cauliflower and zucchini )

    A few tart sized tomato pies as I wanted to have a smaller sized serving available for those that have not tried it yet.
    A small batch of herb coated chx wings done in the Air Fryer

    Lastly her b'day cake! A large round plain white 2 layer cake ( made them from scratch, I have the flour on my face to prove it! lol )
    In the middle will be sliced strawberries soaked in Kirsch and Amaretto, a bit of sugar too, then a layer of real whipped cream over that.
    I've already picked out the best reddest small berries that will grace the top of the cake, on the whipped cream layer.
    With this cake I can avoid the agony of failure trying to write a legible b'day message on icing. Plus she LOVES this fresh tasting cake.
    Whew, I am pooped already just typing out the menu! ha ha

    I pulled a Homemade Meatloaf from the Freezer on the side I am going to try Crispy Parmesan Potatoes and as a veggie will make Parmesan Roasted Butternut Squash.

    I had originally planned on Mashed Potatoes with Mushroom Gravy but I cannot find Russet Potatoes anywhere only White Potatoes which aren't my favourite mashed.

    I was craving a fall oven meal so when we got home from the grocery store I baked some ham and yam( both a decent price)-rounded out with whatever other fruit and veggies we could each find in the fridge.

    Chicken Caprese Spaghetti Squash Bowls. It is a Spaghetti Squash with Chicken, Cherry Tomatoes, and Cheese topped with Balsamic Glaze. The Balsamic Glaze makes this dish, YUM!!!!!

    Will make a salad on the side for some extra veggies.

    Tonight will be Sheppard's Pie using a piece of cooked roast I found in the freezer. I will make a mushroom gravy with some veggies thrown in and top with Potatoes.

    Tonight we are trying Lemon & Herb Chicken with Rice. It is a one pot meal, it is currently simmer on the stove, seriously only took like 10 minutes to get it on the stove, hope it is a keeper.
