Last night my awesome man made homemade meatloaf, baby carrots and roasted potatoes. Was so yummy! Tonight, I promised DS Little Ceaser pizza ($3.99 today only for a medium) Will buy a few so he can have for lunch the next few days since it is his fav. Will make nachos or something easy for anyone else who doesn't want pizza.

Big treat tonight - it's been ages since we had steak! Still no propane for the BBQ, so I did the steaks on the grillpan - herb and garlic sirloins, plus I made packet potatoes, and we had mixed veggies.
Gosh, it was all so good!

Last night I ended up making a Shepard pie with leftover Roast Beef, carrots, celery and mushrooms in gravy topped with mashed potatoes and on the side I had left over grilled zucchini peppers and portabello reheated. It was kind of a clean out the fridge night the carrots and celery are left over my lunch, mushrooms need to be used up and the rest were leftovers to be used up this week.
2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

My first attempt at chicken chop suey. I sprouted the beans at home. LO loves rice when it is fresh, so hopefully he eats it tonight. He hasn't eaten much the last few days and it is starting to concern me some.

grabbed a bag of 12 of the yellow zucchinni type squash things off the damage rack for $1.49. Split them all lengthwise then EVOO'd, herb and sprinkle spiced them up good, then onto the BBQ. The one flat pan with handles I have for roasting veg has holes throughout and is the easiest thing for grilling on the BBQ, nothing falls through. At the end I caved and added fresh grated real Parmesan and Mozzarella to the tops till it just melted. Had some of them with that home made salsa from the other day. oh my! yummy!

the gf lasagna is just popped into the oven!! This time the " assembly " was faster because I used the bags of shredded mozz. that I got on sale a short while ago.

I bought 2 4L jugs of milk this morning and brought them straight home from the store. I went to get LO milk at lunch time, but his HOMO milk smelled off. I called Beatrice and reported the issue, they are sending replacement coupons. I also opened the 2% jug of milk to discover that it also didn't smell fresh. For the most part, I think that it would be fine to cook with...but I won't having it by itself. Dh doesn't like me to freeze milk. Any suggestions for using up the milk. 2 gallons of milk is a lot to cook with in my book. Suggestions are appreciated. Thanks.

Tonight is leftover Chinese takeout, with chicken chop souey, rice, and milk. I am going to make puffed wheat squares too. We have a heat warning right now. The library's air-conditioner is broken so they closed the public library until further notice.
