Easy, hearty, and yummy!
Shipwreck Casserole
----------
2 large onions, sliced thin
3 medium potatoes, sliced thin
1 pound ground beef or lean ground pork - raw
1/2 cup long grain rice - raw
1 cup celery, chopped (or frozen mixed veggies)
salt and pepper
1 can condensed cream of tomato soup
1 can measure of hot water
Whisk these two together in a separate bowl.

Use a 2 L/qt. casserole dish or roaster.
Put onions on bottom, salt and pepper. Next the potatoes, salt and pepper.
Pat the ground beef overtop, fit to cover potatoes, don't push down too hard on it. Sprinkle with salt and pepper (I add garlic powder, too).
Sprinkle on the rice, then the celery (or veggies).
Pour the soup and water mixture on overtop - you can poke meat with a knife so most goes through.
Bake covered at 350 degrees for two hours.
(Can skim off grease around edges with spoon if you use regular ground beef)

That pressure cooker sure is earning it's keep at your place Zonny! Its great you are getting so much use out of it.
We are having a feast tonight! Thick juicy baseball steaks, garlic mashed potatoes, ceasar salad and portabellos sauted with reed onion and jalapeno.

Chinese Hekka casserole, will serve over rice.
Chinese Hekka ( from Company's Coming book)
1 1/2 lbs ground beef
1 1/2 c chopped onion
2 tbsp oil
2 c grated cabbage
2 c grated carrot
2 c sliced (thin) celery
1/2 c soy sauce
1/2 c water
Brown beef and onions with oil in fry pan
Put meat, onions and all other ingredients in 1 1/2 quart casserole dish
Cover and Bake at 350 for 45 minutes.

I made mine with ground pork, and I also add garlic (either powder or real) and pepper.
I also used a bag of three colour coleslaw for the cabbage and carrot components.
I added 1/2 can of sliced water chestnuts and about 1/4 cup of slivered almonds.
I end up adding more water as it's cooking, so it forms more of a broth.

I agree with Zonny although I do not use mine daily on the weekends it can get quite the work out. With two of us in the house working 2 different schedules I can make multiple meals in a couple hours and just have everything in the fridge for the week.

I cook potatoes and rice in it all the time (potatoes are probably a daily thing). Chicken, ribs (ohhh, the ribs), corn on the cob and other vegetables on the steam setting. Scrambled and hard boiled eggs (really easy to peel when cooked under pressure!). I've even made mac and cheese in it.
It's not as fast as you'd imagine in that when you read a cook time of four minutes, it takes 10 or more to get up to pressure before that four minutes starts, then a bit of time to release. But still way faster for a lot of things. Soup that I'd put in the crockpot for 4-5 hours is done in 40 minutes. And cooking things from frozen just takes a bit longer to pressurize, great for those of us who don't plan well!
